    Spring onion mash is lovely.
    I use spring onions in quiche & in omlettes.
    Try to be a rainbow in someone's cloud.

    in mash of course - stir fries arent complete without them either! you can add them to soups for a mild onion flavour and the green tops are a good alternative to chives when snipped finely - lovely added to scrambled eggs at the last second!

    cook some rice nearly through
    in a bowl add chopped spring onions, and a couple of eggs, a splash of soy, a dash of olive oil - whisk.
    fluff rice that hasnt too much water left, add mixture and put on low heat for a few minutes.
    top rice with sweet chilli sauce.

    Hello,

    I have grown a load of spring onions (about 30-40 in a pot) and didn't space out the seed-times so they're all ready to eat now (silly me).

    Can I slice and freeze to use in stir fries?

    Recipe ideas welcome to use up spring onions (I already put them in potato salad).

    I slice and freeze... :) but then I thought that was just me being lazy. Once frozen they're not the greatest to use raw (can go mushy) but they're still fine to use with egg fried rice, stir fries etc. You can put them in noodle soups as well (just at the end and leave them to defrost in hot soup).

  • Mash made with mayo and sliced spring onions is yummy - and freezes well
    With cream cheese on a baked potato

    yup... All of it :) - I tend to fine slice the white bit and then just generally chop at the green.
