You might not make many stews/casseroles that call for whole small onions, but I bet you use a lot of sliced onions. So cut off the green bits, slice them and freeze them - on a flat tray if possible. Then bag them up and use wherever you'd use sliced onions to cook with. No need to thaw but you might want to cut down on any other liquid you use in your recipe.

Thanks everyone. I've used today's with some yellow-label bacon and mince, plus some of m-i-l's spuds (mashed) to freeze as two 'ready meal' pies. But believe me, there will be more next week - and I'll be ready and waiting with your suggestions!0

i bought spring onions to put in my soup and forgot to use them and now i dont want them going off in my fridge. we dont like them in sandwiches so what else can i do with them?

you can chop them finely and put through mash, use in a stir fry, they're nice with some chicken in gravy or cream sauce on its own or in a pie. Chopped and thrown into mash with butter and milk and even a raw egg mixed through makes an Irish dish referred to commonly as "Champ" (also known by other names). It is a wonderful treat and my mouth waters at the thought of eating it, even though we have it in this house all the time.0
