I love spring onions. Use anywhere you'd use normal onions (they are easier to chop fine). Put in quiches, which can be frozen or chunked into stir frys. My fave is simply a piece of bread, slice of good cheddar with chopped spring onions on top and grill. Lush.If you think reality makes sense, you're just not paying attention!0

Mix them in with tuna and mayonnaise for sandwiches, or stir fry them in Chinese oil, for any chinese recipe. Particularly lovely stir fried with brocolli and chicken, and add to noodles or pasta for a quick snack.0

M-I-L is well and truly into her annual spring onion glut, sending us massive bundles each week. They tend to be much more bulbous than the ones you see in the shops, without much green leaf. I usually freeze the bulbws, intending to stick them in winter casseroles and stews but rarely get round to that. Does anyone have any more useful ideas?0

When I grew spring onions they were pretty big so I just used them instead of onions in stews, curries etc etc.

I like them in a layered salad
cold pasta mixed with a dot of pesto,
Grated carrot
cucumber slices
sweetcorn
Finely sliced spring onions
Grated cheese

I chop them and add them to mashed potato, in stir fries and quiches. Mine have been savaged by the slugs and are puny!!My mind not only wanders, it sometimes leaves completely.

I love them mixed with primula/dairylea/laughing cow in a sandwich or on a jacket potato.
