    Pretty much all flours have different gluten contents, and the weather has an effect on this too.

    As has been said, bog standard plain flour has a lower gluten content than strong flour, but it can still make nice bread. My Asda value plain flour works just fine for me in my MR.

    However I do use potato water to give it some help. Next time you boil potatoes keep the water. You can keep this in portions in the freezer until needed. This water helps make a nice soft well risen loaf.

    Also, if you still get a slightly shrunken loaf - remember that wholewheat flour has a lower gluten content than strong flour - so if the particular brand of value plain flour isn't doing well on a standard program - use a wholewheat one to give it more time.

    I've been using fermipan yeast in my BM for years. I stopped using previous supplier, but found it again on Northallerton market this week.

    I usually decant some into a small dark glass jar, that I keep in the fridge. Then I fasten the rest shut with a klippit and shove it in the back of the fridge.

    according to a couple of sources I've seen, including FLOURBIN* (although they have a disclaimer :o) you can freeze what you're not using immediately

    they have some amazing (but not cheap) flours, & even a recommendation from Panasonic. minimum delivery charge is around £7 though, but you can get up to 28Kg for that, I'm busy working up an order :D

    That's £3.61 for 500g plus 2.90 delivery == £6.51

    I've just been looking through the thread trying to find some recipes to tempt me to get my Panasonic out, as I can't find my original recipe book, but could not find any. Are they on a different thread, or has no one posted a recipe?

    I'm looking for something like the 50/50 wholemeal, I think.

    Where am I going wrong?
    I love my breadmaker but I used to buy one of the ready to use 'bread making mixes' It turned out very well and I'm fine eating it warm and fresh but my OH has increadibly stomach pains if he eats it fresh so much so that I've now put it away in the cupboard. can anyone suggest a 'safe' recipe as I resent paying almost a pound for a loaf

    whats in the bread mix?
    could there be additives in the mix causing this?
    I used to get bad indegestion and bloating with shop bought bread but have had none since making my own.
    Does he get the pains if he eats it once its cold?

    sorry, I must have been looking at the wrong item/link ... I thought 2nd class post was £1.61 + whatever it cost = >£5

    Flourbin - I used to know the previous owners of this company. Awesome flour, I think they are selling it from a shop nr chesterfield, if anyone wants the details pm me. might save on a delivery charge!

    the flour sounds amazing, & I don't care what anyone says, the kind of flour you use does make a huge difference to your breadmaking results

    I'm definitely putting an order in, I want to try out some of their really strong flours. I'm in Scotland though, so unfortunately a visit to the shop's out of the question. if I'm ever down that way though, I'll get that address from you :)
