Ice Cream Maker - Do you use yours?

    I made a no churn one with condensed milk and cream -and home made honeycombe, It's to die for!!!! Very rich though

    From memory you remove it once to stir and thats it

    a great easy starter ice cream is mix plain yogurt with lemon curd and churn its fab and can be cheap. there are some good recipes in some of Nigella's books they might be on her website

    i use my ice cream maker several times a week. if i know the grandkids are coming to stay i make several kinds well ahead of time,

    grown-up ice cream with booze in it really good!!!!!!

    Oh, brilliant thread, I bought an icecream maker from Lidl last week and I have been looking for ideas.

    The recipes on line I have found all seem so involved and quite high in calories. I want to make frozen yogurt.

    So, is it ok then to just bung the yoghurt in with mashed strawberries even if the yoghurt is quite thick, I have the 0% fat Greek yoghurt, do I need to thin it out a bit?

    Sandraoffey, which recipes do you use when you make icecream for your grandkids?
  • I have just made an adapted version of the lemon yogurt recipe today.

    I used 2 and a half cups of yogurt, only half a cup of sugar and a generous amount of frozen raspberries.

    It churned for about 20 mins and it broke the raspberries up as it went along and it all went a lovely pink colour.

    I only used the 55p blue and white stripe yogurt and I used one whole pot and some of a second one.

    It tasted lovely.

    Perhaps taste it half way, as I don't like this sort of thing too sweet.

    It was very successful and I thank you for the recipes. I am going to try the homemade custard style ice cream over the weekend.

    Very indulgent - not for the faint hearted.



    Ingredients:
    • 6 egg yolks
    • 200ml milk
    • 200ml double cream
    • 100g caster sugar
    • 1 vanilla pod or 1 teaspoon vanilla extract
    Method:
    1. Pour the cream and milk into a medium heavy-based saucepan.
    2. Slit the vanilla pod down its length with a small sharp knife and scoop out as many of the tiny black seeds as you can into the cream mixture. Cut the pod into smaller pieces and drop it into the pan.
    3. Heat the cream mixture over a gentle heat, stirring occasionally, until it almost boils. Remove from the heat and allow the vanilla pod to infuse for at least 30 minutes.
    4. Put the egg yolks into a bowl with the sugar and beat with an electric hand beater until the mixture has thickened and falls in thick ribbons when you lift the beaters.
    5. Reheat the cream mixture over a gentle heat, stirring occasionally, until it almost boils. Very slowly pour the cream mixture onto the eggs and sugar while still beating the mixture.
    6. Pour the custard back into the pan and cook gently on a low heat until the custard is thick enough to coat the back of the spoon. DO NOT boil.
    7. Cool the custard until very cold. Pour the cooled custard through a seive into your ice cream maker. Leave to churn until ready.
    Enjoy....

    I won a competition a few weeks ago for some kenwood chef attatchments and one is an ice cream maker. I have therfore decided I want to make some ice cream for christmas day pudding (doing sticky toffee puds). I have my recipe and the instructions but what i want to know is can i make it in advance and kep in freezer until the day or will i have to make it up on the day. I really don't fancy hearing th chef whirling away while eating christmas lunch.

    Ooooh, you lucky thing winning an ice cream maker! No problem to make it in advance and freeze until needed.

  • You can definitely make it in advance, although beware the ice crystals forming on top. To prevent this, spread some cling film over the surface of it after it is froze and then put the lid back on. Covering it should keep the ice crystals at bay for a bit longer. They won't harm anything, but they do make the texture a little strange at first.
