I buy cheese when it's on offer or whoopsied, grate it and freeze it. I make up cheese mixes as well...mozzerella + cheddar grated together for pizza, cheddar + parmesan or emmental for cheese sauce or gratins. Saves a lot of time when cooking and you only have to wash the grater once.Val.0

I bought a number of specialist cheddars in the summer. I cut each in half and ate half then and froze the rest for Christmas. They were fine as was the french soft cheese. We had loads of stilton left over after Christmas. That has gone in the freezer for some unspecified future date.0

Hiya - i have read in a few posts that people freeze grated cheese to use a handful when they need it (in cooking etc)....i have never heard of anyone doing this and am dubious, but i dont know why as it seems to make sense.....
Do you guys freeze ur cheese - can i buy one of those bags of ready grated and just whack it in the freezer as it is.....? (i am lazy and also have a bit of a weird phobia about cheese graters lol... since grating a bit of my finger of in GCSE food technology years ago  )Baldrick, does it have to be this way? Our valued friendship ending with me cutting you up into strips and telling the prince that you walked over a very sharp cattle grid in an extremely heavy hat?0 -
Cheese is easily frozen but you should grate it first as it goes too crumbly to slice if you freeze it in blocks. I'm sure you could freeze ready grated bags, just give them a shake first so it doesn't go all in a big lump
Or use a processor to grate it (can you tell I got a new one for xmas - I'm grating/slicing/pureeing/liquidising everything at the moment!)

It's fine. The only thing I'd say is every so often, give the bag a whack so that it doesn't just freeze into one big unuseable piece.
Freezing does make blocks of cheese crumbly, but you obviously wouldn't have that problem with pre-grated cheese.0 -

Yes you can. I have 2kg in my freezer, in seperate 250gm bags, great to grab for sandwiches or pizza, (pun intended)

yes grated cheese is one thing I always have in my freezer; as already said, if you freeze it in the block its too crumbly to slice... don't throw the string away. You always need string!
