I've frozen la roule before - it goes a little "weepy" when you defrost, but I just smoosh it together with a knife as I spread so its OK

Yes, best to eat within a month. I do think they lose a bit of texture & flavour, but still OK.
However, I usually do this: only put on the cheese board what you expect to be eaten. Tightly wrap remainder in waxed paper first, then foil. It will keep for a few weeks like that.0 -
Thanks. They are still in the freezer after I chucked them in there after a day trip to France. I always seem to go a bit mad in the hypermarket
. I just didn't want to get them out at Xmas and find they were a huge soggy mess...

When we have a continental market where I live the people who bring french cheeses say they are fine to freeze. I find cheese to be pretty much the same once defrosted. I froze stilton from cheese selections when pregnant to eat after I had my baby.

Hi all
Just a quick question...
I bought a massive lump of parmesan cheese recently when in Italy but with the best will in the world will not get through it any time soon.
Can I freeze it? and if so is it best to grate it first??
