We splashed out on a load of buffalo mozzarella for a new year's eve party that didn't happen, and now the expiry date is here and we've hardly made a dent in it. First, can I freeze it raw, as it is? Second, if not, can I cook it (on a pizza for example) and then freeze? What would you do with it?

Not sure if it freezes, I imagine it would be fine on a pizza as its on enough frozen pizzas?
I am using some leftover mozzerella later with cherry tomatoes and basil in a toastie - yum0 -
I freeze mine with no problems. When it comes out I tend to use it on pizza and it seems fine to me.

I just freeze it in the pack and defrost to use.
It goes a bit lumpy when defrosted, so It's not nice raw in a salad, but cooks up fine0 -
Thanks for the link - it's specifically buffalo mozz that I'm wondering about though, which is wetter and softer. I wondered if the freezing would change the texture.0

I freeze it all the time. It used to be much cheaper in France than it is here and I used to bring it back (had a fridge in the caravan) and then freeze as soon as I got home.
It freezes really well although would only use it for cooking. I just freeze it in the bag it comes in and then defrost when I want to use it. When ready to use just cut corner off the bag and drain off the liquid before opening and slicing or pulling into pieces to use.

Seconded to freeze it but accept it changes the texture. If you cannot use it with in date though better than the alternative. It's ok for cooking, thinks like melanzana parmigiana. I personally would not buit for the freezer, (though i do buy cheaper mozzerella for the freezer, but I have been known to, like you OP and use the freezer rather than my stomach or the bin.0

I purchased a mixed pack of cheese on offer at a local supermarket as its use by date was the next day. The box contains individually wrapped cheeses. Can anyone tell me if I can freeze the brie and the blue stilton for later use and how long will it keep in the freezer. Thanks0
