can I freeze cheese

    Yes, it freezes very well. Wrap it well and it will store for ages, so it's worth buying more unusual cheeses when they're on offer and freezing them so you're ready for when you need to provide a cheese board.

    I've frozen all sort - hard cheese, brie-type, crumbly stilton-type. All fine

    Butter also freezes well, BTW.

    As earlier poster said, grated cheese freezes best. It seems as though it's one solid lump of frozen grated cheese but it's quite easy to 'chip' bits off. And re soft cheese, I've frozen Philadelphia type cheeses, they separate a bit on defrosting in the fridge but a quick stir with a knife incorporates what I assume is the whey back into it and they're fine.

    i used to years ago buy the huge blocks off the milkman cut them down and freeze i never had a problem with it used to freeze as a block some i used to grate

    I am only going to use it on pizza - so I am not too bothered if it is crumbly etc.

    I frequently freeze cheese as i only purchase it when it is half price or less and i buy quite a lot to last me weeks and weeks. What i have found useful is buying a block and grating it prior to freezing it. Alternatively if i want cheese for sandwiches then i pre slice it and then freeze it.

  • We've always got bags of frozen grated cheese, take it out the freezer up to an hour before you need it. Freezes well and stops "cheese taxation" as you pass the fridge during the day ;)

    I am only going to use it on pizza - so I am not too bothered if it is crumbly etc.

    I'd grate it and then open freeze. That way you can just sprinkle what you want onto the pizza without defrosting. No waste :money:

    I'm thinking of doing this and grateing the cheese first, but worried that the cost of the plastic bags will outdo the savings on the cheese. Any advice on where to buy cheap plastic bags for freezing?

    Put it into boxes - they can be reused, and don't clog up landfill for 1000 years like plastic bags :)
