  • Incidentally, though hard cheese freezes just fine, it does go more crumbly when it's thawed out - just so you know :D

    Hi theskintfamily,

    I've added your thread to the main thread on freezing cheese where you'll find lots of tips. I usually freeze it grated so that I can lift out just what I need because as noonesperfect has said it does get more crumbly after freezing.

    Thank you all for this thread.
    Bought a cheese selection of five from Asda yesterday, reduced from £5.50
    to £1. Stilton, Roule with garlic, mature chedddar, brie and a favourite of mine St.paulin.
    All too much for me. So after reading through all this thread last night, have put all in freezer.
    Each piece was individually wrapped but added foil and put in freezer bags.
    Will see how it goes.

    I just want to tell you that I often freeze mozarella with no problem, some of you may not know it's ok to do, -I didn't until I tried it- some of you might already know this.

    When I see it reduced price I buy as much as I want I then have tried freezing it sealed in the bag and I tried draining the water first before freezing, both methods worked out exactly the same, and were good.

    The best Mozarella is the one made with buffalo milk- if it says just "milk" on the back it's not buffalo, it has to say "buffalo milk" or "lait de Buffalo" "di bufala".

    I also just defrosted a Boursin cheese, which was 5 years in my freezer! -I'm trying to have freezer clearout so I can defrost it :D- and the boursin cheese was as fresh as though it was bought yesterday!

    there's more info in this thread too ;)

    I throw mine in the freezer in the bag and its fine, you can drain the water off if you prefer but it doesn't seem to affect the end result.
    ... don't throw the string away. You always need string! :D

    Yes, Brie freezes perfectly well, I've done it many times. I think Delia says that she freezes it when it's perfectly ripe in her Christmas book. I defrost overnight at room temperature.

    As the title says can I freeze cheese? Morrisons have some lovely cheese on special at the minute, I'd love to stock up as we go through cheese as if its going out of fashion!!

    Yes, you can.

    I find that if you freeze a cheese like cheddar, it goes crumbly after it's been defrosted, so it's a bit awkward to slice for your sarnies. ;)
    If you lend someone a tenner and never see them again, it was probably worth it.
