    I have lots of cheese that was on offer and as time goes on I dont think I am going to eat it all by its date.

    So - can you freeze cheese?

    Sure you can, but it's best to grate it first, as it will be more crumbly once defrosted!

    I grate it first then freeze it.

    Yes you can. Frozen pizza has frozen cheese on it. It might be worth grating and freezing it then you have ready made topping for those home meade pizzas etc. Only hard cheese though. I think you can freeze it in blocks, although I would cut to the size you would use when you defrost. Hard to cut frozen!!

    yes for up to 3 months - defrost for 24 hours and do not refreeze

    I eat cheese well past its sell by date.
    When I open the packet, thereafter I store it well wrapped inside its original pack AND a resealable bag, which I am very careful to seal up tightly without extra air and fold over before putting it back in the fridge. I find cheese is still as good as new at least 4 weeks after (it takes me about 2 months to get through about 500g normally). This is cheddar.

    I too grate mine, store in an airtight container, and use from frozen.

    Just my vote for freezing cheese too - I stock up when I do a monthly shop, lop it up into chunks and freeze it. It does become a bit crumbly but we still use it in sandwiches.

    Save even more time...make the cheese sandwiches and then freeze them. Get one out in the morning take to work and its cool and fresh rather than warm and soggy ;)
