    CHERRY MARMALADE MUFFIN RECIPE
    makes 12
    per serving
    154 cals - 3.66g fat -0.68 sat fat -0.54mg chol -0.69g fibre -2.5 WW points
    pre-heat oven -200c/400f/gas 6
    line a 12 hole muffin tin
    1. 225g self raising flour
    2. 1tsp mixed spice
    3. 75g caster sugar
    4. 115g glace cherries -quartered
    5. 2tbs orange marmalade -plus extra
    6. 150ml skimmed milk
    7. 50g soft sunflower marge
    • sift flour and spice
    • stir in cherries and sugar
    • mix milk and marmalade
    • beat into dry ingredients along with the marge
    • spoon into case
    • bake for 20-25 mins until golden brown and firm
    • brush the tops with extra marmalade and allow to cool
    these don't appear to puff up like muffins..more "bun" sized..think the cherries must hold the "lift" down :p

    CHEESE N CHIVE SCONES
    makes 9
    per serving
    121 cal -2.24g fat- 1.13g sat fat- 0 chol - 1.92g fibre
    pre-heat oven to 200c/400f/gas 6
    1. 115g SR flour
    2. 150g wholewheat SR flour
    3. 1/2tsp salt
    4. 75g feta cheese -crumbled
    5. 1tbs snipped chives
    6. 150ml skimmed milk
    7. 1/4tsp cayenne pepper
    • sift flours and salt into a bowl -tip any bits in sieve in too
    • rub feta into the flour
    • stir in chives
    • add milk and mix to make a soft dough
    • tip onto a lightly floured surface and knead lightly until smooth
    • roll out to about 3/4" thick
    • cut out using a 2.5" cutter
    • place on a non stick baking shet
    • brush with milk and sprinkle over cayenne
    • bake for 15 mins until golden

    CHEWY FRUIT MUESLI SLICE
    makes 8 slices
    per serving
    112 cal -2.75g fat -0.48g sat fat-0.13mg chol -2.09g fibre -1.5 WW points
    pre-heat oven to 190c/375f/gas 5
    1. 75g ready to eat dried apricots -chopped
    2. 1 eating apple -cored n grated
    3. 150g muesli
    4. 150ml apple juice
    5. 15g soft sunflower marge
    • place all ingredient in a bowl and mix well
    • press into an 8" non-stick round sandwich tin
    • bake for 35-40 mis until lightly golden
    • mark into 8 wedges and leave until cooled

    Hi All,

    Sorry I can't remember who has been doing what but well done all the losers, keep going everyone else and don't try all Mrs M's recipes at once!!

    We have had one of our long walks today. It is hot but really windy so you stay cool and don't realise how much sun you are getting. I have caught the sun a bit and am going to have a very pink face later. Ironically the only parts of me that have gone red are the bits I put sun tan lotion on (Factor 30). Sometimes it seems the lotion makes it worse, not better.

    The wind made the sea really choppy so not fit for a swim but I had 2 hours of walking. Nearly half of that was on soft sand so quite hard work which should have burnt a few calories. We took a picnic with us - but all I had was a couple of crackers with cheese and cherry tomatoes.

    I did lots of extra walking after I'd posted yesterday. We have a sort of park with paths right outside the apartment and I had a walk round the perimeter yesterday and found it took exactly 10 minutes at a brisk walk. Half of it is steep uphill so quite good for the legs. I ended up walking round 4 times in all - not all at once - as well as our beach walk.

    B: Muesli etc and fruit juice.
    L: 2 crackers, cheese, cherry tomatoes. Banana
    Snack: Coke, 1 biscuit with coffee after our walk
    D: Going to be tagliatelle with garlic and mushrooms and tiny amount of grated cheese. Orange.

    Oh heck MrsMC -those yoghurt honey muffins are right up my street. :drool:

    Mum's been with me all day and has now satisfied herself that DS1 must be fine... she circled his car twice before declaring that she couldn't see anything wrong. :p He only has slightly pushed in headlight and the bumper has a small crack. OH says the other car had less damage so could have been worse.
    DS1 asked the man if he could fetch his dad after giving over his details and the man said certainly. Apparently he was very kind, OH said, and said some youths opposite the house had made fun of DS1 for owning to it. What a world! :confused:
    We've been hit in the past too without a note being left on the car. We'd only had that particular car a week, too. :mad:

    Didn't get my hummus (sp?) made with mum and then dad here. Will make it later ready for tomorrows lunch.
    Instead I had cheese salad sandwich which was scrummy. Didn't get any exercise other than my tongue talking. :D

    Anyways, a lovely day was had and my sweet dad has told me that on no account must I use my credit card to lend DS1 the car bills money...he's going to lend it to him from his savings.
    We've refused their offers of loans before but I think on this occasion I'll gratefully accept the offer of help for DS1. I'm lucky to have very kind parents that don't have much but would share everything they had.:o

    Right, must get some work done as I've skived off all day.

    If I've missed any other losers besides Toni then well done!

    Can I have a little grumble please? Supposed to be in Amsterdam at a conference tomorrow, went to check in and the flight hasn't actually been booked! No one in office is owning up and its my fault for not checking but this means I'm not actually going anymore - and there was me looking forward to a good old wander around duty free :p

    I was so upset I had to have a snack - a banananana and a Special K diet bar thingie - EWWWWWWWWWWWW!!!!!! 88 calories but ACK!!!!!! It was hideously sweet, you could taste the artificial sweeteners in it - won't be having one of those again! Deffo NOT recommended - unlike the weighwatchers tortilla chips which are very nice at filling a snack sized hole in the stummy around mid afternoon :o

    Still here but I tthink I have messed up big time, I have more or less put on what I have lost again, I am useless!

    Will start again on friday is that ok?

    Tomorrow is a new day - draw a line - start again. Been said loads on this thread by lots of us. Don't worry, just start again and carry on posting.

  • queenpig - don't beat yourself up - at least you are still trying and that's the main thing!

    I have just made a lovely soup/stew thing for my tea - it is a kind of minestrone:

    Minestrone style soup

    I just chopped 2 carrots, 1 leek, 1 onion, 2 sticks celery, a handful of green beans and a quarter of a savoy cabbage (leftover in fridge) and softened them in a little bit of extra virgin olive oil for about 10 minutes. Then I added a can of chopped tomatoes, 2 Kallo vegetable stock cubes and about 2 pints of water, some dried oregano and ground black pepper and about 2 tbs of tomato ketchup. Brought it to the boil and simmered for 10 minutes and then added a can of drained cannelini beans (you could use any kind of beans) and about 100g of macaroni. Simmered it all for about another 45 minutes and adjusted the seasoning. It is really nice and made easily 6, if not 8 portions, which I will freeze, after having it for my tea tonight sprinkled with parmesan cheese.

    I am going to have a go at the cheese and chive scones tomorrow, but I want to make sure I have a "good" night tonight otherwise I will have to wait.

    Yay I've been swimming 80lengths hooray. That makes up for the buffet lunch I had at a work course. I don't think I ate too much but those things are really hard to assess. All those recipes look fab :)
