Hello,
Hope you are all doing well. Ive been okay, not too bad, but, not too brilliant either, BUT, im eating alot better than I was which has to be good.
Ive only had breakfast today which was Cornflakes, and ive have loads of tea. I was at my Mums earlier, and she gave me 2 chocci biscuits (well it would have been rude to refuse:D ).
Today for dinner, is HM soup with HM bread speaking of which Mrs M, could you give me some recipes for soup ie chicken and sweetcorn, and chicken and rice if you dont mind. Id be ever so grateful.
I havent wrote out any meal plans for ages, I just look in the cupboards and think right, ive got this, this and that, so this is what I'll make, however, today, Imgoing to change that and write out a meal plan for the rest of the week.
Alfiesmum Ive got a treadmill too, and im afraid to say, I never use it. its not that I cant be bothered, its really just the time. I love the treadmill (okay okay, I hear you all saying "IS SHE MAD"), but, I do. As long as ive got my mp3 player with my music, thats me, I could walk and walk on it for hours . Its just the time I dont have at the moment. DS isnt at nursery yet, doesnt go until September, so I cant use it during the day, then at night, by the time I get the homework done for other DS, then get their dinner, then baths etc, ats after 8.30 before Ive got any time to myself, and by then, I just think its too late, so, I dont bother. However, I know when DS#2 goes to nursery it will be used all the time.
Oh well, enough of my ramblings.
Speak to you all soon.

Hi there Jackie_W
Will start typing now..not the fastest typer in the world
I know you wanted to avoid using cornflour where possible.. The chicken n sweetcorn i do does use cornflour.. i will post the proper recipe in a moment, but i do my own -cheaper version -which hubby prefers-so i will post that too.
On most soups i use lentils, split peas etc as they make lovely thick soups -plus they are good for us
This one is one i haven't tried yet -but i should as hubby loves lemon....
AVGOLEMONO SOUP
Serves 4
per serving -1.5WW points - 93 cals- 900ml/ 1.5pt chicken stock
- 50g /2oz long grain rice -rinsed
- 3 egg yolks
- 2-4tbs lemon juice
- chopped pasrley
- seasoning
- pour the stock into a pan, heat until simmering
- add the rice and half cover -cook for about 12 mins until the rice is just tender
- season
- whisk the egg yolksand add 2tbs lemon juice
- whisk until smooth n bubbly
- add a ladle of the soup and whisk again
- remove soup from heat and slowly whisk in the egg mix, it should thicken slightly
- taste and add more lemon/seasoning if required
it does look rather nice though and i would be tempted to add a bit of shredded chicken and a few frozen peas-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
CHICKEN N SWEETCORN SOUP
serves 4
per serving -2WW points -128cals- 200g chicken breast
- 1 tsp salt
- 2 egg whites
- 750ml chicken stock
- 250g creamed sweetcorn
- 1tbs cornflour
- 2 tsp soy sauce
- 2 spring onions- sliced finely
- place chicken in processor and blitz until finely chopped
- add salt
- lightly beat the egg whites in a bowl until foamy
- fold into chicken
- bring chicken stock to the boil
- and add creamed corn
- dissolve cornflour with a little cold water
- add to soup and stir over a low heat until thickened
- reduce heat and add the chicken mix -breaking up with a whisk
- allow to heat through -without boiling
- season to taste with soy sauce
Right my cheaper version is,- boil your chicken carcass to make stock as normal and strain.. place back on heat, grab a tin of sweetcorn (tip it into a blender with its liquid and blitz)-if you have a lot of stock then i use 2 tins.
- tip it into the stock, and heat through, thicken with cornflour -again how much depends on how much stock you have...
- season, i add all the little bits from the chicken when i strip the meat off,
- and i also throw a handfull of frozen peas in and the darker bits of the spring onions
- plenty of soy sauce -although this will lose the lovely yellow colour
hope that helps..will type up some more soup recipes..although my own are generally "make it ups as i go along":p-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Thought some of you might be interested to know that I made an approach to a nutritionist. Ive not felt quite right about my general diet for a while. I eat what others would call a balanced diet and have never really been that bad and yet my weight creeps up. Im not a small eater though im not one for huge portions either and somehow it didnt tally.
Ive found a lady and had a quick chat explaining things over email and she has some very precise feelings about what is causing my problems and how certain issues are related. Its £45 for a consultation and £15 for repeat ones with constant telephone or email support alongside this and often doesnt see people more than twice. It would be nice to get some answers and so im planning to go fairly soon. I do trust her as she is also working for BUPA and she doesnt sound hippy-ish
Feeling like im not a hypochondriac after all and my nagging feelings may actually be something.0 -
Well I hope now you've sobered up now!
