Many recipes suggest wholemeal flour as alternative to spelt.
Thankyou all for the welcome - Mrs Micawber, I've just taken your bread recipe out of the oven.
It's not my usual way/recipe, so that perhaps explains it - risen, but not fantastically.
Used Dove's organic wholemeal breadflour, lots of seeds(usual tbsp each of sunflower,poppy,pumpkin,sesame,linseed), reduced 3tsp salt to 2, which is double my normal amount for 500gms of flour.
Did second rise in tin.

Was it the basic white recipe of mine you were using???
the weight of seeds etc could explain it not rising so well, and i usually find wholemeal flour needs more liquid and yeast to rise like good old white.... As a basic loaf mine usually ends up about 3-4" clear of the top of the tin-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

thanks! believe me its a first for me! have always been a 16 on the bottom half or occasionally a 14 on a good day!(am a traditional pear shape!)

Strange menu to-day...
Breakfast was 8 chips, 2 slice BLT, some bubble'n'squeak, slice white pudding and coffee...oh and 1 pint of water....
Lunch was 2 bowls of home made tomato/veg/bean soup;
Dinner was ham, lots of turnip, spinach and celery, mash, followed by jelly fruit and blueberry yogurt....followed later by two small chocolate and coconut bars with coffee and another pint of water.
Off to bed soon with some prunes and guess what...yet another pint of water!

I always put these seeds in and know wholemeal or any non-white flour needs 2 rises. In fact, I'd decided I'd put it into a tin too large.
As per usual, I sliced it last night, to freeze and extract ,slices as required and it cut beautifully, thinly(35-40gm WW slices)without crumbling. The 'crumb'/texture is perfect, slightly elastic.
Rising is done in the hotwater cupboard which is ideal, consistent - the first time I've ever had such a pleasing helpmeet for this.
I was using Mr T's free yeast for the first time, too - so next time will be better again - and this loaf IS very tasty.
Will now be saving any potato water as well.

Morning everyone!
last day at home before returning to work! need to dso some menu planning.
Food plans for today are
muesli
cheese salad sandwich(small seeded bread) and grapes
quorn cottage pie, veggies and roasters or SW chips
snacks - banana, low fat yoghurt, leftover mango slices, grapes.

b: weetabix and a few crunchy nut cornflakes
l: crackers and low fat soft cheese, frozen yoghurt(s)
d: something with pasta, perhaps s/f jelly
WI tomorrow so i intend (!!) to be very good today.

Tis lovely and sunny here so it makes you feel on top of the world, doesn't it?
I'm glad I'm not the only one that seems to have entered pigpen's topsyturvy land of breakfasts, Marie's at it, too. :rotfl: Love the idea of bubble and squeak for a breakfast. Yum!
Have done it again today as I was craving for another bierwurst sandwich(finally can spell it!) with brown sauce. If I had made myself have my readybrek first I'd have only thought about it for the next hour and then had my lunch at 10am!Now it's eaten I'm not bothered about food at all and panic over. :beer:
Rose wood - my eyes are a bit blurry this morning and when I read your post I thought it said '1/2 an hours smooching along the waters edge'. Was just thinking what a lovely way to spend a hot Sunday afternoon. :rotfl:
Food today:
Bierwurst in soft bap with brown sauce.

Ham salad with jacket potato and apple coleslaw
snacks - orange yoghurt and apples
Have a lovely joint of ham simmering nicely on the hob which means I'm going to have a yummy ham salad later instead of the toad in the hole the lads are having. I can not have the smell of ham cooking around me for ages without knowing I'll be tucking into it sometime today.
The boys love the HM sausages but only DS2 will eat the ham (unless its cunningly disguised in a pasta sauce)
As its a 2 week break from school work for DS2 it means I'm free as a bird for the next fortnight so I'm going to finally get my seeds sown, my recipe file sorted and my garden ship shape. Not to mention the boys bedrooms overhauled. :rolleyes: Should be some exercise in that lot somewhere.
