I have some fresh basil in my freezer at the moment, i just washed it and stuck it into a bag, then froze it. When im ready to use it, i crush it up before it defrosts and it saves chopping it later!!! Ive let herbs defrost before using, and if cooking them, ive put them straight into a recipe too, from frozen!!!

    Hi redballon, :)

This is another good post for our Quick questions thread so I've added it in.

Just to let everyone know, there are quite a lot of threads in the Cooking section of the MEGA Index sticky listed under "Freezing" which I hope that you all find quite useful.

    HTH :)

Most people just chop them finely and then squish them into an ice cube tray. You can bag them once frozen and then just add an ice cube's worth to your recipe when needed.

They will freeze whole with no problem, but then you've got to find a way to separate enough out for your recipe if they settle into one big lump.

quick question re freezing apples. i have looked on the sites you recommended queenie, but they say use ascorbic acid for freezing apples (just in chunks or slices, to be cooked when thawed) i'm sure i've soaked them in salt water before drying off and freezing, but i can't remember!

Ascorbic acid's just Vitamin C - used to stop the apple slices going brown. You can buy AA in powder form, but it's usually easier just to dip them in lemon juice.

I want to make some Naan bread in my new Panasonic 253 this evening, but as there are only two of us we won't be eating all of them. Can I freeze the leftovers? And if so should I freeze the dough before cooking or freeze the cooked naan breads? Thanks :)

Yep! :) Freezing the cooked naan will be fine. You can freeze the dough if you like, but I always think I get better results freezing cooked.

Anyway - this would be a good query for our quick freezing questions thread so I'll add it on to the end.

I wouldn't do this - others may think differently. But I think it's v. dangerous to defrost food and then refreeze.

I think you'd be better off freezing your curry in individual portions (or one meal size if there's more than one of you - ie 2 portions for 2 , 3 for 3, etc). Then pull out what you need for one meal and leave the rest in the freezer.
