Slice into cold salted water. Blanch for 1 minute. Dry and freeze. HTH
Did you use the sugar method previously, gp?

Would you cook or blanch it first do you think?
With herbs, i just pop them straight in the freezer, in a bag. They are good to 'crush' when frozen, saves chopping when they are defrosted!!!! (that doesnt take long either, and i have popped them straight into a recipe, crushed from the freezer)0 -

yes, you can freeze it.
in the past i have just washed it, dried it, chopped up and put into a plastic bag but i found that after a while it turned a funny dark green colour, not pretty to look at i can tell u!
My mum then gave me a brill tip and i've never looked back, after chopping it up, stick it into a plastic container with a lidand it will keep for absolutely ages.
I usually buy 3 bunches for a pound from our local asian supermarket and it keeps for ages in my plastic tub!

I chop mine up, put them in ice cube trays, freeze the cubes and then put them in a tub. Fresh as a daisy when you use it!But I'm going to say this once, and once only, Gene. Stay out of Camberwick Green0
