jjef - strawberries do freeze, but they go soft and rather mushy once they're thawed out. I have frozen most of our surplus strawberry crop this year and plan to use them during the winter in mixed fruit compotes (just simmer the fruit gently together until soft) and serve with cream or creme fraiche, or just pop them into strawberry jellies when it doesn't matter about them being soft as long as the flavour is still there.0

I bought the ingredients to make a carbonara but the supermarket didn't have the size cream I wanted so I bought the next size up. I was going to just use what I wanted and throw the rest until I realised that wasn't very MSE. I guess I have three options. One, make up more sauce than I need using all the cream and freezing what I don't use, two, just use the amount of cream I need and freeze the rest or three, because you can't freeze cream throw it. Can you freeze cream? If I make up the sauce it will have cream, egg, parmesan cheese and panchetta in it. Are the freezing options possible?0

Yup, you certainly can. It mightn't whip on thawing though.
You could even mix some, seeing as it's not an awful lot, milk and sugar and you'll have ice cream0 -

i have been given a huge punnet of strawberries (one of the big pick your own size) how easy is it to freeze them and what can i use them for after frozen - have read that they dont freeze as well as rasps but was wondering how well they do freeze?
If not defrosted properly they can be like frozen bullets inside, flesh is tasteless and all the sweetness stays in the defrosted juice. I once tried a variation on Nigella's orange ice-cream recipe using strwaberries instead, which was fine to eat until you got to the strawberries!! (Dinner party disaster).
My experience is that the only thing frozen strawberries are any good for are smoothies and even then make sure you have a powerful blender and a sharp blade.Value-for-money-for-me-puhleeze!

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!0
