I froze a shepherds pie last week ( without the mash pots).
Anyway I want to use it tomorrow I think but I got the plastic container out this afternoon and all the fat from the shepherds pies has frozen at the top. Is this still ok to use, should I take the fat off when its defrosted before putting it in the oven?I'm trying so hard to be thrifty, but it doesn't come naturally. You lot are an inspiration!JUST LOVES THE O/S BOARD0 -

I stuck some stewing lamb in the freezer once and when I was ready to cook it, found that the fat pulled off quite easily.0 -
I have just helled alot of peas and bean which i got from the farm shop over he weekend, do these need to be blanched beofre freezing? or can they justgo straigh from pod to freezer?

Straight to freezer for me. I grow loads and they last all winter long.0

That's really interesting because every book I've checked in has said to blanch them for one minute then cool in iced water before freezing, which is obviously a big faff. If you can freeze them with out blanching then it would make the task a lot easier. Presumably you take them out of the pods before freezing; do you cook them from frozen and if so for how long?0

I don't blanch either:D take out of the pods, put in plastic bag, place in freezer. I've never really timed how long to cook them for
I'm guessing about 5-10 mins but it depends how soft you like them.

You can freeze without blanching, but they may not keep the flavour for as long as blanched ones
I used to do this, and same with runners
