I am a Chef who also teaches food hygiene .
yes defrosted meat can be cooked and then refrozen.
just make sure the meat is completly defrosted before cooking and fully cooled before refreezing.
A lot of problems are caused by people not cooling things quickly and fully before freezing or storing in the fridge.0 -

oh dear. I was going to make my husband some proper burgers so I put the frozen bag of mince in the fridge yesterday and today I was going to make the burgers. I was going to mix up all the ingredients and grill them (making a job lot), then after they had cooled down, freeze them.
But this morning I just realised that on the bag it says "use within 24 hours of thawing and do not re-freeze" so does that mean I cant do the above

You can refreeze it after cooking it, it is just the raw mince you cannot refreeze'We can get over being poor, but it takes longer to get over being ignorant'

yes cook and refreeze, but don't refreee again uncooked.
Rules are usually
Freeze once (if bought frozen of course it needs to stay frozen)
Cook once
Freeze once again
Reheat once again
I've had hit and miss refreezing burgers, I find the best ones are the ones I don't drain too much fat off, oh and seperate them into usable batches as they don't usually want to come apartOne day I might be more organised...........

You can freeze frozen mince after you've cooked it
What you shouldn't do is re-freeze previously frozen defrosted mince.

Can anyone help?
I bought some mackerel fillets (fresh, but packaged) from the supermarket. I didn't use them so bunged them straight in the freezer. Now I want to defrost them to cook, but reading the back (should have done that before!:rolleyes: ) it says 'not suitable for freezing'. I think they were possibly frozen and defrosted before hitting the supermarket shelf.

What are the general rules for freezer life? Ie- how long can you keep frozen chicken in the freezer for before it's no longer any good to use??
