Freezing - Tips and Quick Questions thread

  • How do I freeze mushrooms. Do I blanch them or cook them. Are they better frozen whole or sliced. Much help greatly appreciated.

    I've started making yogurt with the Easi Yo method & make follow-up batches with some of the existing culture and UHT milk. But I don't use a whole carton of UHT milk & wonder if I can freeze it to use in a later batch. Will it still be effective, and do I have to let the milk reach room temperature before mixing with the yogurt culture? Thanks.

    Twinks hob nobs...can i freeze the mix or would I be better cooking them then freezing?

    There's only going to be one way to find out :) Why not just do a small amount extra next time you make it and do a test.

    Time to report back. I did freeze a portion of custard when we were discussing this, and it has finally come out of the freezer this evening. Indeed it separated a bit on defrosting, but I whizzed it with a stick blender while reheating, and then it was absolutely fine! Note I had used a little cornflour in the original custard to stabilize it.

    Thanks for that. I was fairly sure it would work, after all it works for most sauces, and even mashed potato! but I'd never tried it - which is why I said "can probably" and not "can" :)

    Hi there,
    hope someone can help?. Is it possible to freeze mangos? The grocers down the road from me are selling theirs for 25p each. They are a bit damaged but thought that maybe i`d be able to peel, stone and cut out the bad bit. If not any suggestions what to make. I`ve already made chutney and will make some ice-cream later today.

    Mangoes freeze very well. Every year we buy a couple of cases of the sweet yellow (wrinkled skin) magos from Pakistan and freeze them either in chunks or turn them to purree to make ice cream or mix with Greek yogurt, etc. They're also good in smoothies.

    Hi Primrose,

    I freeze a half opened carton of UHT milk for yogurt making. Doesn't seem to make any difference. I defrost it at room temp. before making the yogurt.
