  • I have some time on my hands and am thinking of baking in readiness for Christmas. I will bung everything in the freezer.

    I have a glut of apples and have thought I could make...

    Individual Apple Pies
    Apple Crumble
    Anything Else????

    I have found a tin of cherry pie filling so will make one of those

    Thining about making a Quiche. For 4 individidual ones do i Just make as normal? Do I need to part bake the pastry for quiche? if so for how long?

    Oh and can i freeze sponge? thinking of making a base for triffle using chocolate sponge cake.

    This is going to be a major thing for me as I don't do this sort of thing.

    Any suggestions for anything elsse would be grately received.

    I am about to have a go at spiced apple chutney to put away for Christmas, good use of apples if you like chutney! :)

  • Apple muffins go down well, just a basic muffin recipe with chopped apples and mixed fruit and cinnamon, the hubby takes them in his packup every day (as well as other flavours). Get down to your local Morrisons or Asda for the reduced stuff, I got reduced eggs and lemons the other day for less than £1 for 15 eggs and 5 lemons and made 4 pots of lemon curd....yummy!! I always buy the bashed bananas for banana bread or muffins, and the straws or other berries are fab for making homemade jam or muffins!!

    Btw, I freeze probably around 90% of things. For example, last night for tea we plucked a homegrown cabbage out of the garden, used what we needed, then cut the rest and froze it for another time. I also regularly shop for reduced bread, cakes, tarts, pasties and donuts for the kids and hubby's packed lunches, they get frozen and put into lunch boxes frozen, by lunchtime they are lovely and soft, just how you bought them!!

    Have over bought for a family tea today and would hate to see it go to waste. Can I drop it in the freezer to use another time or are there any other good ways to use it up? (other than sitting in the armchair with a spoon and a smile on my greedy little face?) :rotfl:

  • I think so.

    I seem to recall going to a function at uni (an afternoon tea type thing) and us all complaining that the best before date on the little pots of cream was the previous week. The catering manager came over and explained it had been frozen and the date referred to if it was still just refridgerated.

    It tasted ok.

  • I'd personally vote for the stuffing your face option myself. Maybe that's just me though, I can't leave the stuff alone if it's open.

    Make some mincemeat with the apples, then make and freeze all your Christmas mince pies.
