Clotted cream surplus

I have a huge tub of clotted cream left over after we had cream tea for our weekend treat yesterday. Has anyone ever cooked with clotted cream? I'm thinking omelettes and quiche for which I normally use double cream. Any and all suggestions gratefully received.:A

    Hi gwinnie,

    I use clotted cream in the same way as I would leftover double cream (soups, sauces, desserts, making butter, freeze it). This older thread might give you some ideas:

    How about blinis and smoked salmon? You could adapt other recipes that call for sour cream, too.

    Soured cream ideas - maybe add a shot of lemon juice if you want a tarter flavour.

    Well, in time-honoured tradition for me as I can never decide between all things yummy, I did a bit of each. I used some to stir through porridge for my todd and a my cheap and cheerful cabbage, potato and baked bean mealsoup. Didn't attempt the blinis. But ready-made bagels work. :D And in between I ate some with a spoon. :D

    Been sent a tub of clotted cream, and need some suggestions for what to do with it! It's best before monday, and as only hubby can have it it won't get eaten before then just on scones etc.

    So I thought I could do something with it, make something that will keep a bit longer. Any ideas? I've googled and can't come up with anything.

    Thanks Floyd, I found that one too. Problem is hubbs doesn't eat ice cream (sensitive teeth).

    Was thinking some kind of cake or tart. dunno really.
