    It will be fine, some batters improve with resting so I would definately use it....yum!

    if you freeze them , whats the best way to defrost and reheat them?

    Talking of resting, does anyone know what that actually does? What is actually going on when its resting? And is it the same as dough. If I add ingredients to my breadmaker and set it running, it rests for the first hour or so... whats that all about, nothing is happening.
    I think with the breadmaker, it's getting all the ingredients to the same temperature. Don't know about batter, although I always leave mine to rest as my mum used to do.

    With a batter, resting allows the water and flour to mix. This allows the flour grains to swell, so making a thicker mixture, which makes better pancakes.
