    Empty your frying pan and wipe it with kitchen towel then put in the frying pan a good handful of salt.put this on the stove on high heat untill it is smoking then empty contents out and wipe with kitchen towel again this is much better than a non stick frying pan.the first pancake usually sticks after that you should be okay when making pancakes sprinkle sugar on top of them on the plate then a piece of greaseproof paper on top of that repeat over again untill you run out of mixture then ps a little cold water in the mixture works wonders let us know how you get on my husband is a chef but ill at moment credit to him not me as he does all cooking for me.

    hope you are getting on ok. i always have my pan really hot - smoking!

    thats not the advise you have been given here tho. but it always works for me.

    Oh dear - I LOVE pancakes, but having been told to stay off the sugar (and DH is diabetic so clearly he needs to as well) I've very reluctantly decided not to have any this year. I love adding lemon juice, sugar and golden syrup!! But I'm with all those who reckon that the first, and maybe second, is never very good...
    Resolution:
    Think twice before spending anything!

    Quick update, following your advice I got 2 lovely pancakes that were almost like proper ones......then the last fell apart again.

    Sod only having them on a special day we shall be eating pancakes for breakfast lunch and tea until I get them right lol!! :D;)

    I always find that pancake mix needs to be more runny than yorkshire pud mix (and my first one always ends up dodgy as well!!!)

    squeaky - that was such a good tip, and at the appropriate time! I was using my cast-iron frying pan because the non-stick one is really past it and hasn't been replaced yet. Just before reading that, I was re-greasing with a drop of oil between pancakes and using my pastry brush: I noted it was steadily getting shorter :-)!

    Then changed to kitchen towel, and i will never forget to do it like that again in future. Many thanks indeed!

    froggy_girl - some sunflower oil or other light veg oil is fine, and also lighter than butter. Also it doesn't burn so easily. You do as follows: add half a tablespoon of oil to your pancake batter and whisk it in thoroughly. If you are using a good non-stick pan, you can (mostly) get away with only lightly oiling the pan before the first pancake - the oil in the batter will take care of the rest. If you do need a drop more during frying the pancakes, you will notice. If - like me today - your pan is not non-stick, add a drop of oil before each pancake and spread it over the bottom of the pan with kitchen towel - NOT your pastry brush.....!

    So I'll have to do it later. :D
    If you lend someone a tenner and never see them again, it was probably worth it.

    I just made my first ever pancakes and they were yummy

    Used

    4 oz flour
    1 teaspoon baking powder
    1/8 teaspoon salt
    2 eggs
    300 ml milk
    desert spoon oil


    greased pan with butter
