If you have the time make the batter with just 1/2 the milk at least half an hour before cooking and leave to stand (in the fridge if poss). Whisk in the rest of milk before cooking. A mix of half milk/ half water can be used quite successfully if needed.
You'll find any remaining lumps tend to disappear without too much effort and I feel the pancakes are lighter. This also works for Yorkshire puddings.Target 1: Pay off Alders by July 2007(done), Target 2: Clear overdraft by end of 2007

My usual very waist-line friendly pancake filling for anyone who's on a permenant diet:rolleyes: :
Stew rubharb in enough sugar free lemonade to cover with a good grating of ginger. Strain & shove in middle of not-so-waist-line freindly pancakes & scoff the lot.:D Filling is zero weight watchers points & is yummy;)Post Natal Depression is the worst part of giving birth:p

I'm cheating this year... I've bought two boxes of betty crocker bisquick
I like having them in and they were in the reduced to clear and I dont think even OH could get the recipe wrong :rotfl: I wonder if I should challenge him this year *evil*
As for fillings, usually I would make bolognese up and stuff the pancakes with that, but last year someone suggested peanut butter and jam which is DELISH! so I've got the stuff in to make them ones as well as some lemon juice
As for the giving sugar up for lent HA! I'm giving up buying anything except fresh fruit/veg, dairy and anything we HAVE to have (like toilet rolls  ) that run out! My cupboard is bursting so we'll be fineCreeping back in for accountability after falling off the wagon in 2016.Need to get back to old style in modern ways, watching the pennies and getting stuff done!0 -
I make a batch of pancakes and add in cinammon to the batter. This makes a lovely pancake on its own, but even better with stewed apples in the middle!!Mortgage free 04/03/2025. Thanks to this site and lots of overpayments bit by bit.

Ok then....it must be my turn to have a bash at this.
The first thing I need to know is....if this is meant to be using up your stuff before lent, how come I've had to go shopping? If you lend someone a tenner and never see them again, it was probably worth it.0 -

And are you really telling us you, the master baker, didn't have eggs, milk and flour in?

Down to about 1/3 pint of sterilised milk (emergency reserve as I couldn't be arsed to fight my way round Morrisons this weekend), plain flour's BBE Nov 2004, had some eggs.If you lend someone a tenner and never see them again, it was probably worth it.0
