Yup, 4oz plain flour, 1 egg, 1/2 pt milk - whisk it together with any whisk until it doesn't have lumps in, pour in enough to coat the bottom of a lightly buttered frying pan and away you go!
I use double this amount to make a big stack for a family of four (small kids mind - probably treble it if you've got teenagers :rotfl: ):TProud to be dealing with my debts :T0 -

Did these on Saturday - dead easy.
1. Buy the "Basics" batter mix from Sainsburys - only costs 11p and each packet will make approx 6 large pancakes.
2. Empty mix into a dish and add 1 egg and 250ml water.
3. Beat together until all lumps are gone and the mixture is smooth - can use a fork, a whisk, a hand blender, a food processor - doesn't matter really.
4. Put a tiny amount of vegetable oil in a non-stick frying pan to lightly coat the surface.
5. Use a medium ladle to spoon in the mixture - use a small glass or cup if you don't have a ladle.
6. Cook to taste and don't forget to flip half-way - get the video camera ready for those hilarious "You've Been Framed" moments.

I was advise against co ops pancake mix. its 55p a packet and you have to add milk and eggs. lol so its basically flour then lol

BTW Tesco are doing a 400g jar of nutella for only £1.05 at the mo. Bought it Saturday. There's only a little scraping left for the pancakes tomorrow :eek:

I prefer - scotch pancakes than the very thin ones. ( I suppose it is because I'm scottish) I always use the Be-ro recipe it is ( they call them dropped scones - we call them pancakes
Dropped Scones Makes 6-8
100 g (4 oz) Be-Ro Self Raising Flour
pinch salt
50 g (2 oz) caster sugar
1 medium egg
4 x 15 ml spoon (4 tbsp) milk to mix
few drops lemon essence,(optional)
1 Mix flour, salt and sugar, add egg and gradually beat in enough milk to make a thick batter.
2 Add essence, if used.
3 Cook 2 or 3 at a time by dropping spoonfuls of the mixture on a moderately hot, well-greased griddle.
4 Cook until the underside is golden brown and the top is covered with bubbles, about 3 minutes.
5 Turn and brown on the other side. Serve buttered, hot or cold.
N.B A baking griddle should be well-greased, then heated until a little water sprinkled on the surface skips about in balls, evaporating. A frying pan makes a good substitute
They are thicker and delicious - I usually use a bit more milk than the recipe states. Made a double batch on Saturday morning and they were gone as soon as they came off the griddle! Double mix normaly makes about 12 Palm sized ones.
