  • I would recommend 4tbsp mayonnaise per 1kg of potatoes, so that would be 40 tbsp, which roughly equates to about 1000g jar of mayo. HTH :D

    I use 1 tablespoon of mayo mixed with 3 tablespoons of plain yoghourt for 1 kilo of potatoes, - ie 60ml dressing but I do like quite a generous amount of dressing. This would be 600ml dressing for you, 150ml mayo and 450ml plain (thick) yoghourt.

    Similarly, I use 1 tablespoon vinegar to 3 tablespoons oil for 1 kg potatoes - this works out to 60ml dressing per kg so 600ml for your 10kg

    I make potato salad by cutting potatoes into approx 1cm chunks ( peel or not as you prefer, I don't). Steam for about 5 minutes until just tender, but not falling apart. While spuds are cooking put some mayonnaise...add a bit of plain yoghurt if you like.....into bowl large enough to contain salad, add good handful of finely chopped chives...use scallions ( spring onions) or ordinary onions if you have nothing else, salt and pepper. When potatoes are cooked, drain well and tip into bowl and mix gently with the mayo, yoghurt, onion and seasoning...cover and leave to cool before putting in fridge until you want it...I have been using this recipe for many years and am happy with it....you might prefer a small amount of other seasonings for a different flavour

    Mine's a low fat one but OH loves it and doesn't know it's low fat :D

    Boiled new potatoes cut in half if they're big, chopped spring onion then mix with a dressing of half Hellmans LF mayo and half Kraft garlic and herb dressing.

    I've made it this way for years and it's a family favourite.

    Meant to say, add the dressing while the spuds are warm, they soak up more flavour then.
  • Or you can try a warm potato salad with vinaigrette dressing and chives/scalllions/chopped onions, and whatever herbs you feel like - my OH prefers this as he doesn't like mayo and it's a good winter "side"
  • Thanks for the tip rockie4, I had never thought about adding salad dressing to tattie salad, and I think I could try adding that to my eggy weggy sandwich filling.
    I also add mustard to the mayo, and sometimes a bit of finely chopped chilli just to zazz it up.

    I chop new potatoes quite small, cook 'til just done, then put in cold water to cool (also stops them continuing to cook). In a big bowl I put low fat salad cream (we don't like mayo), finely chopped onion (any - spring, red, white, chives), fave salad veg such as chopped peppers, sweetcorn, etc, salt & pepper, sometimes paprika. Have sometimes done a warm salad, fried some onions & mushrooms, then added still warm spuds, tossed in a bit of balsamic vinegar with some wholegrain mustard added - goes lovely with any sort of peasanty-style chicken dish!
