    Hi there

    Im a potato, onion n mayo fan :D -I like my potatoes left in their skins too -and Once they are drained I throw the onions whilst they are still warm as it gets rid of some of the heat and "rawness" and I put some mayo on whilst its warm as they absorb more flavour that way..then once cold I top up the mayo if need be :p

    Of course, if you want to, you can add all sorts of lovely things to the basic MSE mix.

    Paprika is one of the richest sources of Vitamin C.

    PS. I need to do a little bit of posh potato salad for a special birthday dinner I am doing for a lady friend in a couple of weeks. Are Pink Fir Apple potatoes seasonal, in or out of season, available?
    The acquisition of wealth is no longer the driving force in my life. :)

    try using normal (not new) cutting into cubes before you cook them. Once cooked, drain and mix with lots of mayo, spring onion and chives or anything else you fancy throwing in. If you add the mayo when the pots are still warm then it ends up a bit like a potato salad mash!

    I always make potato salad with salad cream.

    Cube the spuds and boil/simmer until just right
    Cut up an onion into smallish pieces
    Drain/rinse the spuds in cold water
    Throw in the onions
    Sprinkle some mixed herbs in
    Mix in just enough salad cream to coat the spuds/onions
    Chill. Serve.

    As a bit of a variation, make the potato salad and then throw in a few cubes of pickled beetroot.
  • I use the cheap salad potatoes from aldi, cook, slice, add a good squeeze (or dollap) of mayo, same with salad cream, some chives and red onion.

    I then use any left overs as my lunch and add chopped frankfurter sausages (or the hot dog sausages)

    BEAUTIFUL!!!!!!!

    For a really easy potato salad, tinned potatoes work well too.
