Hello,
I am a firm beilever that potatoes should be cold when the sauce is put on, otherwise they just soak it up and you have to use much more to get the same effect.
I use cold tatties, cut up, mayo, salad cream, loads of salt and pepper, and creme freche chen I have it in, to liven it up a bit I usually add chopped spring onion, I find the raw chopped onion too harsh and it repeats on me for days or alternatively you can use mustard to give it a wee kick.HTH.xxx0 -

this is how the german's in the north of germany make potatoe salad.
1) boil about 5 medium sized potatoes, you can boil them in their skins or peel them first. when cooled down rub skins off , chop in quarters.
2) chop into small slices at least 3 frankfurters, (i usualy buy hertz ones)
3) chop into small slices 4 gerkins
4) cut into quarters, a handfull of cherry tomatoes
5) hard boil, three medium eggs, peel and chop into slices.
method: place everything into salad bowl with2 - 3 tablespoons of olive oil, mix loosely with salad forks.
i usually place in fridge for a couple of hours before serving as the oil.gerkins/frankfurters marinate with the potatoes to give it flavour.
the germans eat this type of potatoe salad with hm bread and butter and is excellent with wine and snacky type foods if friends are round!!

My potato salad goes down pretty well with my family. It's as follows:
Potatoes
Mayonnaise with a touch of mustard!
Chives and Dill - either, or both but fresh if possible
Gherkins - large mild variety chopped up.

I like it with half mayo/ half ranch or caesar dressing with spring or red onions and black pepper. I sometimes add crispy bits of bacon with hubby's if there's been a spare rasher.I've been lucky, I'll be lucky again. ~ Bette Davis0

Please try this recipe - it's lovely. I cheat a bit, but I'm asked to prepare this for firends regularly.
Tinned potatoes - (cheapest possible) chopped in large pieces
Finely chopped onion
Chopped celery (small pieces - I slice it lengthways into three and then chop)
Lots of freshly ground black pepper
salt to taste
Mayo:jI gave up jogging for health reasons; my thighs rubbed together and my knickers caught fire!0 -
The recipe chez Piglet is pretty much the same as various others on here (potatoes, mayonnaise, spring onion, black pepper), but sometimes we put some garlic into it (its easier if you make "garlic mayo" first and then mix it in...:p ).
Makes it a bit different...also nice if you serve it while the potatoes are still warm...yum!:D

Forgot to add, sometimes Mr Piglet makes a "classic" potato salad of boiled potatoes, spring onion and french vinaigrette (light olive oil, white wine vinegar and dijon mustard). This is something he picked up whilst training to be a chef...and is supposedly "much healthier" than the mayonnaise-based dressing that most people tend to use here in the UK.;)
