To feed two.
Place two handfuls of pots into pan.
Pour over boiling water from kettle.
Add teaspoon salt.
Bring to boil with lid on.
Turn down to simmer until cooked. 15 mins?? Test by prodding a couple of pots.
In a large bowl, add 1 tablespoon mayonnaise; 1 teaspoon white wine/ red wine/ cider vinegar (whatever you have); grind of black pepper; freshly chopped chives.
Tip the HOT freshly cooked pots to the bowl. Stir well.
Allow the pots to cool.

Boil eggs. Place eggs in cold water in pan. Bring to boil. Simmer for 5 mins.
Immerse IMMEDIATELY into cold water. Keep in cold water for 5 mins.
Peel and chop into pot salad.
Serve with salad.0 -
I have been looking at potato salad recipes online and they all seem so complicated.
Can't I just throw potatoes, mayo, and chives together and that work?

I couldn't agree more. so many recipes are "cheffy" and " over-engineered". In a word, yes.
POTATO SALAD
Serves 2
INGREDIENTS
500g (1lb) of new potatoes
4 spring onions
4 tablespoons of mayonnaise
METHOD
Clean the potatoes. Scrape off any eyes or shoots. Don't peel them unless they really need it.
Put the potatoes into a saucepan on a medium heat. Cover with water. Bring to the boil, then turn down the heat until it is just boiling (simmering). Boil for about 15 to 20 minutes.
While the potatoes are cooking, cut the top and bottom off the spring onions. Take off the outer leaf and discard any slimy bits. Give the spring onions a wash and cut them into fine rings.
When the potatoes are cooked, drain off the water. Cut the potatoes into halves or quarters, depending on their size.
Put the potatoes, spring onions and mayonnaise into a bowl. Mix thoroughly.
ADDITIONS AND ALTERNATIVES
Use "designer" potatoes like Charlotte or Pink Fir Apple.
Replace half of the mayonnaise with salad cream. Use home made mayonnaise.
Sprinkle with ¼ of a teaspoon of paprika.
TIPS
To test if the potatoes are done, stick a fork into one of them. If it is hard, give them a couple more minutes and test again. If it goes in easily, they are done just right. If it falls apart, they are overcooked.

Yes that will work fine - or use whatever you have in the house - mix mayo with cream or salad cream.
For variations add some mustard, a bit of red onion, garlic etc

ooh garlic, that's a good idea, I already have that too. I basically don't want to have to buy anything else so might have to pass on the spring onions

yep thats how i do mine, new pots, mayo, spring onion, and i even chop up the greeny bit of the spring onion to decorate the top, although not really sure if your meant to do that or not, tastes good though!!!April Grocery challenge(total/spent) £200/£75.530
