    I use normal onions most of the time because I always have those in and they taste lovely, too. Black pepper added makes it scrummy.

    In south africa a traditional potato salad is dead easy to make, cube and boil potatoes until soft and boil some eggs until hard.

    Slice eggs, slice/dice chives/onions/herbs (what ever takes your fancy) throw it all together and coat with salad cream. Once cool place in fridge to chill and then bob's your uncle its ready to eat :beer: (lovely with fried/roast chicken or a bbq :p

    I have a friend who makes a german version which is a lovely alternative. New pots cooked and sliced then drizzled with a little melted butter, some Maggi, plenty black pepper and a teaspoon of sugar, add chopped onion.

    Gorgeous and a bit different.
  • this isn;t the absolute simplest but it's pretty easy and i like it :)

    potatoes
    cherry tomatoes
    sprinkling of black pepper and dried basil
    handful of rocket or watercress if you want to splash out ;)
    dressed with a mix of salad cream and natural yogurt.

    I don't like potato salad with mayonaisse (mayo is for dipping chips in!) but I make a spud salad with a vinaigrette and crispy bacon.
    Just boil the spuds, mix some olive oil and white wine vinegar (or flavoured salad vinegar if you have it) and a bit of fresh parsley. Sprinkle of salt and pepper, tiny bit of lemon juice and I usually put a pinch of sugar in too.
    Chop bacon into tiny squares and fry till nice and crispy, so it goes that nice deep red colour but not burnt.
    Wait for spuds to cool and mix it all up!

    Serve with a bratwurst in a bun.... mmmmmm

    (Obviously that probably doesn't help if you have none of the ingredients but just thought I'd share!)

    Tinned Jersey potatoes mixed with a little mayo or vinagrette or even bottled salad dressing, not too much, with some spring onions, or shallots, or red onion and some fresh herbs, mint is very good......and it saves on putting the stove on. My fav is Charlotte potatoes still hot from the pan with mayp herbs onions etc and served hot, good on colder days. I always cut up the potatoes before I cook them so they cook nice and fast. I also often use Butter beans as a carb addition to a salad, can be served alone or with viniagrette or mayo and can also be heated up, in fact almost any kind of tinned beans, except baked, can be used to fill out a salad.
