I make my potato salad made with warm potatos (not hot), scallions, mayo and balsamic vinegar - mum makes hers with half mayo, half salad cream, when I worked for JL we made the dressing for eggs and potatos with mayo and vinegar from the pickled onions...

I sometimes use cucumber chopped into little squares in my potato salad.. something different
  • I cook my cubed potatoes, then drain them and toss them in a mix of white wine vinegar, olive oil, salt and pepper, whilst still hot. Leave to cool then mix in mayo, creme fraiche, chopped spring onions, chopped dill and parsley.

I boil my potatoes unpeeled - dont overcook them otherwise they will crumble. Leave to cool and peel off the skins when cold (I really do think it give a better flavour peeling once cooked and cooled). Cut into cubes. Mix up salad cream with a bit of milk. Add grated onion and grated apple. Mix all together carefully so you dont mush the potatoes. I like to add in those peppers you buy in the jars (for the life of me cant remember the name  ) or sometimes I grate a boiled egg or two for the top. Top off with sprinkling of paprika.....
  • My dad makes his like mash. He boils peeled potatoes, mashes with salad cream and adds chopped spring onions, salt and pepper.

I find this weird, and don't like salad cream, so I make mine by steaming new potatoes cut into inch cubes, and adding to lowfat plain yoghurt with spring onions and seasoning. Often a touch of lime or lemon juice to add a bite.

    New potatoes
    mayonnaise
    spring onions
    dried mixed herbs

Mix everything together while the potatoes are still warm.

Cooked new potatoes add chopped onions, salt/pepper and a dash of good quality olive oil. Mix whilst warm.

Use up leftover mashed potatoes, add onions and mayo
