This one - http://www.ravelry.com/patterns/library/baby-yoda-sweater - is fairly simple - some shaping, but not much in the way of seams, and no buttonholes etc. It's excellent for babies because it is easy to get on and off them, doesn't involve putting anything over their heads, and because it fastens with two ties (one at each side, one of them inside and one outside), it is very adjustable for size, so fits for ages and ages.
I made it in a soft aran yarn, and made a hat to match it - the hat has a rolled brim so also fits for ages (you just roll the brim down more as the baby's head gets bigger) - that pattern is here: http://funknitsfreepatterns.blogspot.com/2008/02/newborn-hat-and-socks.html0 -
