Thanks for that Lusciuos, I've never made Corned Beef Hash/Hoptpot. I've saved a copy of this and I'll definately make it next week :-*
Just run, run and keep on running!

  • Hiya,

A few bits, first one humerous, but the idea is sound and could liven things up. A friend had a dinner party and to put an interesting slant on things used a load of food colourings to colour the food. Blue potatoes, green chicken etc.

When asked, what the creation was before carving the chicken, he replied straight faced "Roast Muppet" !

Cheap food, Egg/rice noodles can be very filling and cheap, my mum used to do a nice sauce with a tin of cheap tomatoes (a pinch of sugar, can really help in turning naff plum tomatoes into good ones), garlic, herbs etc. Can make it spicy with chillies, or more savoury with Basil and oregano.

Cheese and potatoes pie isn’t a bad one though that I recall from school, it was mash with cheese and onion mixed in and topped with a cheesy crust, (salt, pepper, herbs all optional). A cheap instant gravy could also be added for a filling and tasty bite. A poor mans sheperds pie.

Another cheapie from my youth was a nasty stew my step dad made which was mainly water, hard carrots, soggy potatoes, turnip, sweed and the like. To make the stock he’d boil the meat bone from Sunday dinner. Possibly done with some creative flair it could be palatable….in my case it used to last three or four meals, as that was the length of time it took for me to be forced to finish it (one helping that is)

The corned beef hotpot/stew is very tasty and great as a winter warmer :)
I cut it in chucks too...........luurvly ,though I wouldn't put the chunks in until the last few minutes or it turns too mushy :)

We have green potatoes once a week. Green as in when i mash the spuds i add a couple of teaspoons of mint sauce to the mash. A couple of teaspoons of sugar also mixed in counteracts the tartness of the vinegar. I serve it with lamb and the kids love it.

"Thanks to glad, Man_bout_the_house, Luscious and filigree for some delicious (and inexpensive) looking recipes but I think I have to give it to Caterina for a simple but always tasty pizza.  My only addition to that recipe would be some fresh basil (and probably some anchovies)"

Congratulations Caterina. :)  Can you pm me your details?
