Think this recipe comes in at just under £1.62 although I havn't costed it for a while. We eat it loads, infact we had it tonight!
Cheesy Red Rice
2tbsp oil
2 onions chopped
12oz long grain rice
1 3/4 pts veg or chicken stock
1 tin chopped tomatoes
6oz cheddar cheese, 2 inch cubed
Fry onions until soft, stir in rice until coated in oil, then add stock and tomatoes and season with S&P.
Bring to the boil and simmer for 5-10mins until slightly reduced.
Pour into an ovenproof dish and add cheese cubes. Submerge some and leave rest scattered on the top.
Bake in the oven for about 30mins at 180 c.
If I'm feeling a bit flush or want to fancy it up a bit for an informal dinner party, I add fried chopped bacon, red pepper, garlic and use two complimentary cheeses (mozzerella is very good with cheddar). Serve it with garnish and slap two crossed chives on the top and folk think you've spent a fortune doing something swanky-dankyLife's a beach! This is a recipe that I've used time and time again and is quite healthy too!:-
Corned Beef Hotpot
You will need:-
Approx. 8 Potatoes
1 Tin Corned Beef (Argentinian is cheapest - I think!)
6 Carrots
2 Onions
2/3 Oxo Cubes
3/4 Pint Water
Cut the Potatoes into big(ish) cubes
Peel and slice the Carrots into rings
Slice the Onions (roughly slice, don't dice)
Sprinkle Oxo Cubes over the Meat and Veg
Add some Water (approx. 3/4 pint)
Season with Salt and Pepper
Cover and bring to the boil
Simmer for approx. 20-40 minutes, depending on consistency
Voila! - a tasty, warming winters meal for 6 on a shoestring budget. Ideal for Halloween and Bonfire Night!

Sorry! You can do what you want with it really (within reason!), but I normally cut it into big cubes because it breaks down and makes the nice gravy!
Yum yum! (nice with a bit of red caggage or beetroot)... oh... and maybe a glass or three of red wine! :P0 -

This is ludicrously cheap, mostly because you don't pay for all the ingredients!
Bacon fat: You know how you're supposed to trim the fat off bacon before cooking it? Keep the trimmings. The fat from an average pack of back bacon will do for this recipe.
Lard: Keep the fat that drips off cooking joints - chicken keeps well. Use cheap veg oil if you're determined to resist cholesterol - it only costs pennies.
The technique of saving all fat from cooking fits in well with WWII rationing principles
Recipe:
Bacon fat
Cooking fat or 4 tbsp of cheap oil
Two 14oz tins of economy tomatoes - 36p
Two onions - 10p
500g bag economy pasta - 19p
Garlic to taste
Chilli powder to taste
Stick tinned toms in blender. Very finely chop onions and bacon fat.
Heat cooking fat in pan and add onions and bacon fat, cook gently till onions and fat are slightly browned. Add crushed garlic, and blended tomatoes. Rinse out tins with some water and add the lot to the pan. Chuck in ground pepper, pinch of dried herbs and chilli to taste.
Simmer gently for 40 minutes till it's nice and thick, serve with the boiled pasta.
With the remaining £1 you can buy a bit of cheese and some cheap veggies to bump up the vitamin count.
