    Just spotted you're doing corned beef cakes too tonight MrsM .. great minds huh? If you get back on here before teatime could you just give me an idea of how to make them. I was trying to avoid frying, hence crispbakes, and I can't find any recipe. :o

    I'm sure MrsM, being Queen of the corned beef :p will be along with a recipe any moment now, cheerfulness ! if it were me, if they have a breadcrumbed coatingI'd probably give them a very quick fry off sealing in hot oil before bunging in the oven, or drizzle with a tiny bit of oil - that's only because my experience with attempting to cook freshly breadcrumbed things in the oven without a little additional fat has not been very successful - too dry. ( commercial stuff seems to be fine but thats cos I suspect they mix fat in with their breadcrumbs ) but someone else may have other suggestions.

    As per the roast spuds, pigpen, can only suggest that you don't have to use very much fat - I parboil mine and use about a tablespoon of fat and toss the spuds around until they're coated. I did see a wartime recipe for cooking roast spuds without fat, using a pint of water with a tablespoonful of salt in it :eek: the recipe assured us they would come out all golden brown outside and fluffy on the inside but I'm not brave enough to try it yet !

    I am quite pleased with myself for the last few days. Have been eating loads of fruit and veg and barely indulging in " shop rubbish " as I call it. Also was determined not to buy bread this week. I've been using the wholemeal soda bread and pittas from the freezer as well as rice cakes and ryvita, so thats stopped the temptation to make piles of toast/sandwiches at odd moments as well as saved money. I am not feeling particularly cheerful due to work cr*p but at least I have not taken refuge in stuffing my face with tons of rubbish.

    I'm hoping I will be able to have some form of breakfast but as usual its not guaranteed. Lunch will be wholemeal pitta with chicken, cress, tomato and the remains of last night's coleslaw. Can't tell you what dinner will be yet but it will involve bacon as I took some out the freezer last night !

    Well things are going good, really focused, am really pleased with myself.

    Breakfast slice wh toast, flora light and marmalade (just a smidge of both)

    Dinner Last nights lentil and bean stew gravy liquidised for soup

    Tea HM veggie haggis, butternut squash and tatties (using some of the 'soup' as gravy)

    Snacks Mullerlights, cherries and grapes

    Morning everyone.

    Gale force winds here so was up early to rescue my bins and its noisy as next doors shed door is banging.

    Well done Mrs M! :T and Furry:T Thats really good. Not sure what I will be having today. Im going to see mum and she loves chocolate. So part of our ritual is having some while I manicure her hands. Will try just to have a square. She is 90 and in a nursing home. Still smokes and usually has two cigarrettes while Im there. Night shift tonight and temptation as the weekly shopping will have been done. Choccie biscuits:eek:

    Morning all. Didn't want to get up this morning. Still feeling sleepy.

    Breakfast was porridge with cocoa and sugar :o - tasted good though ;) and not much else left in the cupboard to go on it! :p

    Lunch is couscous and bit of left over pork - couldn't be bothered to make soup last night but will make it on Sunday ready for Monday lunch ;)

    Tea is - leftovers from the freezer :rotfl: Curry mixed with chicken casserole that wasn't too nice :p Not chucking it out though ;)

    Snacks are an apple and the dried figs (the novelty of them has worn off though)

    As for roasties - I either parboil and then drizzle and toss in a little oil or use a spray bottle and put oil in and spray them - still lovely just better for you ;) Did see someone roast new potatoes in balsamic vinegar - which I tried but was too scared to put lots of balsamic in but they were quite nice and not really vinegary either.

    Hopefully wages will clear tomorrow as have very little food, no dishwasher tabs, no washing up liquid and am wondering what I'm gonna wash up with tonight!!! ;) Any ideas what will work in the DW? Only have non-bio washing powder, soda crystals, stardrops (much too frothy I think), might have some bicarb :confused:


    Frogga - hate it when the car won't start. Ours does that when it gets low on petrol (apparently there's much in the petrol tank that sinks to the bottom) have put cleaner stuff through it but still a bit temperamental - as is OH if he has to push the car to start it ;)

    Kitty - I make my corned beef thingies like you do - a brief fry then bung them in the oven - same as I make my fishcakes! lovely if you use HM briwn breadcrumbs too and more healthy!;)

    Boddy - sorry about your neighbour!

    last day off today before a long working weekend - sat sun and mon - s 10 hour shifts and an 11 hour shift:eek: so need to make preparations today for my menu planner for the family and myself.

    Food plans today are

    B - muesli

    L - not sure yet, maybe something on toast

    D - veggie pizza, salad and spicy HM wedges, might try them in eggwhite to see how they go - I usually just spray them with frylight.

    snacks
    banana, ryvita/rice cakes, grapes possibly a low fat yoghurt.

    I'm going all out now before wednesday weigh in to try and lose my last pound to get to target of 10 stone. This last bit has been a swine to shift!:mad:

    Thanks taplady - that's now my backup plan but would much prefer to wash up the lazy way with the dishwasher :D

    As I expected, no weight loss, but no gain either so am happy enough...congrats MrsMC and Furrypig.

    Had muesli with extra dried fruit and coffee.....OH just made large omelette for his breakfast (I know!!) and I will have some later on cold with salad...probably for my dinner as don't eat early enough in morning to feel like lunch.

    Need to make more soup to-day, we are going through vats of the stuff but its all good and not very calorific so don't see it as a problem. Dbrother donated several peppers red onions and potatoes when he went away yesterday so will use them as base, probably add a few lentils and some chicken stock from freezer, few herbs and bob's your uncle!

    Frogga...that 'I'll be back' sounded ominous...sorry about the car...probably just needs bit of driving to boost battery if it has been off road for even couple of weeks...

    Off to shop...no cat food and he is threatening to eat the baby!

    Hi everyone,

    It's really windy here today, though the sun is shining still. It should be fun on the beach today as the sea will be quite rough. I love it when the waves come crashing in.

    Pigpen, how about making your fish and rice into kedgeree? It is one of my favourite dishes but I can't have it very often as OH is allergic to eggs. I base mine on a Delia recipe but sometimes add mushrooms and a tin of salmon too.

    Food for today is much as it has been all week for breakfast and lunch, ie muesli etc and crackers and cheese. For tea I am planning to do something with minced beef. I made it with rice and lots of vegetables the other day so might make a cottage pie to serve with the last of the broccoli today rather than repeat myself. I bought a pack from Lidl the other day for 3.39 euros but split it into 3 so just over a euro for a meal for 2, which is pretty good. As I have mentioned before I only have 2 rings and a microwave here so am a bit limited in what I can cook. Still, it stops me baking which I do lots of at home.
