This is the recipe I use @cheerfulness4, it's very tasty
Cod with a lemon and breadcrumb crustServes: 4 Cook Time: 35 mins
INGREDIENTS
360 g sweet potatoes, peeled and cut into wedges
1 tsp smoked paprika
4 tsp olive oil
4 cod fillets , about 120g/5oz each
2 medium slices wholemeal bread, whizzed into breadcrumbs
1 lemon, juice and zest
1 tsp thyme leaves, roughly chopped
1 tsp chopped fresh flatleaf parsley
320 g green beans, trimmed
black pepper
DIRECTIONS
Preheat oven to 200°C/Gas Mark 6.
Begin by mixing the sweet potato wedges with the paprika and 2 tsp of the oil. Season with black pepper, transfer to a baking tray and bake in the oven for 10 minutes.
Meanwhile, lay the fish on a board and mix together the breadcrumbs, 1 tsp oil, the lemon zest and juice, the thyme and parsley. Season with black pepper and sprinkle over the cod fillets. Press int the fish to form a crust.
Remove the sweet potato wedges from the oven and place the cod fillets among them.
Return tray to the oven for 15 minutes, until the fish is just cooked and flakes easily when lightly pressed.
Blanch the green beans in boiling water for 3-4 minutes or until cooked. Drain and toss with a little butter and black pepper.
Serve the cod with the beans and the sweet potato wedges on the side.

That sounds delicious. I'm going to fit that in a week on Wednesday when we had cod down to have. DS loves sweet potato wedges, too. Thanks for that.

Hi
Condolences Roundtuit.
Weigh-day -1lb please Brambling.
Pleased with that as it includes the take out last Wednesday and wine on 2 evenings. This week I’ll be eating out once and I’ve done a meal plan for the rest of my food. Now my cravings have gone I’m hoping I won’t be so bothered at the lack of spontaneity.
Movement was a bit lacklustre so there’s much room for improvement there this week.Old Style Weight Loss Challenge 2025
