  • im going to make my own pizza on saturday night

    did toy with the idea of buying the shop bought bases and then just thought id bite the bullet and make my own

    however im so not known for my cooking so i really need some help in the making of the base
    i think i'll be alright making the sauce and toppings but its the base thats troubling me !!

    do any of you have a nice easy peasey recipe..that doesnt include me needing an italien degree in cooking ;)

    Yep!

    You don't have to make a dough with yeast - you can use what is know as a scone base.

    200 - 225g self raising flour

    3 tbsp cooking oil

    pinch of salt

    water to mix


    Place the flour in a mixing bowl, add the salt.

    Drizzle oil over the flour and then stir in well. (It will essentially disappear).

    Now add water tablespoon or so at a time and mix in until you get a dough. I usually mix with a spoon until it shows signs of clumping up well and then use my hands to finish off. If you slightly overdo the water your dough will get a bit sticky - don't worry about it, just lightly dust it with flour and it'll be fine.

    This makes either a 9" deep crust pizza or a twelve inch thin one.

    Roll it out, add your sauce and toppings.

    Place in a preheated oven at gas mark 5 (190°C) for fifteen minutes.


    This took longer to write than it does to make the pizza base! :)

  • Jamie Oliver's recipe (adapted by me)
    1kg strong white bread flour
    1tbsp salt
    650ml tepid water
    14g quick acting yeast
    Tbsp sugar

    Put the sugar in a measuring cup, add a little boiling water to dissolve and then top up with cold water to the 650ml mark. sprinkle the yeast on top and let sit for a few mins. Be sure and give it a good stir, the yeast sinks to the bottom and sticks if you aren't careful. Either whizz this up with the flour and salt in a food processor or put the flour in a bowl, make a well in the middle and pour in the liquid, then stir till mixed. Take it out and knead till silky (or till fed up :)). Makes about 12-15 bases. And can be frozen in little balls ready for next time.

    Just don't make the mistake of following jamie's advice to put the flour on your worktop and make a well rather than in a bowl or indeed his advice to put it directly on the oven shelf if you have slatted shelves!!

    Nice easy recipes. Will make a pizza for lunch on Saturday. How would you make tomato sauce for pizza as I have never made home made pizza before.

    i use a tin of ratatouille blended until smooth for my tomatoe sauce the kids liked this better than the tinned tomatoes i used to do

    I just use tomato puree mixed with a drop of water. Alternatively you could make one from onions, garlic, tin of tomatoes cooked and reduced down. (I did this tonight as I had run out of tomato puree. I think it would have been better if I had blended it a bit.)
  • packet of tomato passata with a tablespoon of dried oregano and a tablespoon of olive oil and a pinch of salt to taste. Boil up for a bit till nice and thick. be careful it tends to leap out of the pan a bit, use a good deep one or you end up with a cooker that looks like murder :)

    i did try somthing similar to that the other day but i just bunged the water in all in one go and the oil to.. so couldnt understand why it wasnt working!!:o

    I use a ciabatta loaf sliced to 2 or 4 and make my pizza's that way, I have never make pizza dough i will make it one day

    I like the tinned tomatoes with herbs and garlic added, but I also sometimes use tomato puree.

    Again I add herbs and garlic - and here's my secret recipe addition... I add soy sauce and work it in so that the consistency is more like thick ketchup than tomato paste.

    It works. Honest :)
