HM Pizza Base Recipes Tips and Quick Questions

Hmmmmmm.... Ive been looking for a recipie for home made pizza bases for this evenings dinner, and they all say plain flour, and add yeast. I have a massive quantity of self raising flour. Will this work? Should I add yeast too? Or just the SR flour?? :confused:

This home cooking malarkey is excellent, but I dont want to ruin the first HM pizza, as the boyf will never eat it again if he doesnt like it!

    Yep. SR will work. Here's a recipe I do regularly:-


    L A Z Y P I Z Z A
    ===================

    Preparation time: 10 mins
    Cooking time: 20 mins

    Ingredients:
    ==============

    Dough:
    6 oz (150g) Self raising flour
    1 oz (25g) Cooking oil
    3 oz (75g) Water
    1 pinch Salt

    Sauce:
    1/2 tin Tomatos - finely chopped
    1 tbsp Tomato ketchup
    1 tbsp Tomato puree
    1 - 2 drops Tabasco (optional but NOT more!)
    1/2 - 1 tsp Dried mixed herbs

    Instructions:
    ===============
    Turn the oven on to Gas Mark five to preheat. (190C 375F)

    In a small thick bottomed saucepan place the ingredients for the sauce, bring quickly to the boil and then leave on a high simmer until ready to use (Stir occasionally during preparation).

    In a mixing bowl, place the flour and salt, add the oil and work vigourously with a wooden spoon. At this stage there will be no suggestion of a dough, nor even of 'crumbs'. Now add 2/3 of the water and work the dough again. The 'pastry' will be of a thick crumbly nature. Add more water, little by little, working the dough until it is of a soft pliable consistency. For best results, add water until the dough becomes a little sticky - then dust well with flour and rework - not forgetting to stir the sauce...

    Prepare all the toppings you have chosen - not forgetting to stir the sauce...

    Roll out the pastry thinly to about 12" diameter and place on a baking tray. (being lazy, I roll it out ON the tray)

    Spread the sauce over the pastry, add the toppings, cover these with grated or thinly sliced cheese.

    Place in the oven for twenty minutes.

    Or there is the ready steady cook way...

    Quick and Easy Pizza Dough

    The recipe is 4oz plain flour, splash of water, splash of olive oil.

    Mix together to form a dough, roll out thin (5mm) and dry fry in a pan for 2/3 mins each side.

    Place on baking sheet and add pizza topping, cook in 220 degree oven for 5 mins.

    I can't remember who posted this a couple of weeks ago, but it works!

    Otherwise if you use the recipe for "cheese scones", and use this for the base of the pizza - its delicious. Thats how mum used to make it, and i do too - its very easy, and yummy!!!

    It's an "investement" but you can get a pizza baking stone that you pre-heat in the oven and then where you place the pizza dough with the toppings.

    It makes an incredible difference, the pizza is so super crunchy and well baked you won't want to eat pre-cooked stuff anymore :)

    I got mine from the Professional Cookware company for around £13.

    I just use any white bread recipe (but use olive oil as the fat), & put it through the "dough" cycle of the breadmaker. If you don't have a breadmaker, make up the dough, knead well & leave it to rise until about doubled, then it is ready to roll out & add the toppings. It can be nice to add some dried basil to the dough as well.

    I use the packet of Pizza base mix which are available in supermarkets. The best price I have found is in Morrisons who do a pack of two for 52p. I like them because they are simple, quick and yet theraputic to knead! As a single mum working full time I use them a fair bit during the week when I am tired. Once rolled out, I spread on tomato puree, finely chopped vegetables like red onions, mushrooms, peppers etc and them top with mozzerella cheese. They cook in around 15 minutes and then I serve with salad.

    How do i make a pizza base- what do i need and how do i cook it? do you cook a pizza all at once or part bake the base? Does anyone know a low fat version?

    Do you have a breadmaker? That would probably be easier but if not you can use this recipe;

    Preparation time: 2 1/2 hrs (for 2 pizzas of 30cm)

    Ingredients :
    1 1/4 cup warm water
    1 packet yeast
    3 1/2 cups plain flour
    1 teaspoon salt
    1/4 cup olive oil
    1 pinch sugar

    Recipe :
    Pour the warm water into a bowl, sprinkle the yeast on top and leave for 2 minutes. Add a pinch of sugar and cover bowl. Put in a warm place for 5 or 6 minutes, until mixture becomes frothy.

    Put flour and salt in a large bowl, make a well in the centre, then pour in the yeast. Add the rest of the water and the oil, then mix until all ingredients are combined.

    Knead until springy and elastic.

    Roll the dough into a ball and put in a greased bowl. Cover bowl with clingfilm and leave in a warm place for 2 hours, to rise.

    Divide dough into two. Roll out each half onto a floured surface, until you have the desired thickness.

    Make sure pizza base is the same thickness all over by pressing with the flat of your hand and mould it into shape.

    Pinch up the edges, so the edge of your pizzas will be slightly raised.
    Choose a topping and cook in a moderately hot oven.



    ALthough this recipe does have olive oil it's quite a healthy fat. The best way to cut down on fat on a pizza would be to leave off the cheese!

    The best way to make use of the time it takes is just to cook a load and freeze them. I have to admit to only having done it twice :rolleyes:
