    Toxic Lemon. that site looks good. Never made my own pizza. Where will I get that flour it specified, or can I substitute? TIA

  • A really good tasty way to make 'cheat pizza' is to buy baguettes at the end of the day. Cut them in half, smother with pizza toppings and grill. Yum! I suppose they would be called bruschetta if you were feeling posh :p

    Blimey, only one! LOL, we use the dough to make two pizzas and have one each. I believe you can freeze the dough in a bit of oiled cling film, but I've only done this once myself and I half ruined it by defrosting it in the microwave and leaving it too long.

    But to be honest because your only using half the normal amount of dough you should find that one pizza is a nice amount for one person. As long as you dont overload it or eat loads of the topping as your preparing it (like I do), it should be a nice satisfying portion without being excessive.

  • i remember when DD was at playschool, they used to make a pizza type thing that we actually tried at home .....and it worked......cheap as chips too!!

    The "base" was nothing but flour and water (not sure if it was SR or Plain flour, but would imagine SR). Mix enough together for a dough consistency, then roll out. Next, spread with tomato ketchup and chuck some grated cheese on top......then roll up and cut into slices. Bake at 180 centigrade til it looks ready LOL, sorry cant remember how long!
  • Jamie Oliver recipe is good:

    1kg strong white bread flour (or 800g SWB and 200g 00 flour)
    650ml tepid water
    14g yeast
    1tbsp sugar
    1tbsp salt

    This makes enough for about 12-15 thin based pizzas. It freezes really well in little balls too, I usually make a triple quantity which is enough for 2-3 months

    BTW I started out using the 00 flour but it is very expensive and hard to get in Belfast. When I ran out I used just SWB flour which is much cheaper and in fact everyone preferred it.

    Also very nice with just pesto on top if you're using store cupboard stuff.

  • I used to work as a baker and to stop our pizza bases rising too much we used to dock them all over just before they went in the oven ... basically go mad with a fork and cover it with holes. If you part bake the bases first then they freeze much better and you have a bit more control over the rising. We also used olive oil in our bases which is quite 'heavy' and prevents the bases from rising too much.

    That italyum recipe sounds very similar to the one I got with my breadmaker - I made home made pizza using the dough and it was fab :-). Good luck with your pizzas.
