I had applied 16th and not heard back. Sent a secure message through e-banking and they replied saying it was processsed on 20th and details of the account are being sent by post. Seems there is no standard approach by the bank.1

To be on the safe side, I would only put the £1,000 in after the switch is complete.

I had a big "Welcome to the COOP" email today, thanking me for joining the original ethical bank, and advising that I can register for online banking in 24 hours. It then goes on telling me what will happen if my application is for an Every Day Extra account.I have held a COOP current account, and have used online and app banking since 2021. All I did recently was requesting a switch, which they confirmed by text will happen this week, and opened a savings account, which has been up and running since last week, too.
It seems their processes could do with some streamlining.

The app isn't mentioned in the offer terms. Only online banking. So delaying the app registration wouldn't buy you anything anyway, and I don't think you need to worry about registering for online banking now.
As the offer is also for existing customers, with existing online banking, I don't think they could reject anyone for having registered for online banking before the switch has completed. It would be quite unreasonable for any bank to expect their customers would delay setting up online banking for what is supposed be your main account
Different for the £1,000 deposit and the 5 debit card payments - it is reasonable that they set a time period in which these need to happen to be eligible for the bonus wonga. I will definitely only do them after my switch has been completed.
Though this is just my opinion, you need to decide for yourself what you are doing.
