It's just about got to be the workmen then, though I'm not sure why they'd need to take the latch out.

Usually blaming the cat has some value but then there's that lack of opposable thumbs... and certain workmen are adept at excuses, though I have no experience of the ones you used.
The workman is my best friends husband and says he didn’t remove it. I’m 90% sure I have closed the kitchen door since I had the floor laid and it wouldn’t have closed with the lock missing

That has got to have been unscrewed & I don't think even then it could come out without the handles being removed.  It would be the "spindle" joining the handles that would make that latch move so it could not have been independent of it.  Someone has removed that.  Just think about how it works.  Press down the handle which turns the spindle between the two handles which moves the latch which allows the door to be opened.  In the picture you can see the piece joining the handles.  My sincere apologies to any cats in residence.
Exactly it’s been removed because as you say the bit that’s missing would be have been attached to the spindle. I just don’t know how, who or when 🤷‍♀️

The door is definitely a conundrum. I’d visulised a round doorknob that the cats could knock around the floor. But there’s no way any cat could have moved that…..and if they did get them on film and earn yourself a fortune.
so pleased you found your pass in your pocket when you were heading to work.
Operation get the house ready to sell is going well. I’m sure there will be something around for you when you’re ready. Exciting 😁

It’s stumped me 😂 but I’ve given up thinking about it now. I was thinking of changing the door handles at some point because they are old and I’ve never liked them so maybe this is a sign 😀
