    Sorry missed that i used almond breeze unsweetened milk, 400ml is hexa or 2.5 syns, couple of sweeteners and bunged in oven when it was on for casserole, added some fruit to it

    Its humongous i was going to weigh it but couldn't be bothered to get the scales out 😂 was only £1 too, so a Brucie bonus, what other type of rice pudding is there then? 🤔

    Sometimes it's just boiled in milk and comes out all wet and sloppy like tinned rice pudding. ☹️ I like it baked quite firm with a skin on. 😊

    Morning all, it's absolutely freezing again this morning!  Think it was colder last night than the night before - I woke up early because I was cold.

    Not had a rice pudding for ages either!  I always do a baked one @maman; I use almond milk as well as it makes it nice and creamy.  I use 100g pudding rice, 800ml unsweetened almond milk, sweetener and stir it all together in a dish; grate nutmeg over the top and cook in the oven at 160 for 30 minutes, stir it and put back in the oven to cook for another hour or so.  If you like a thick skin you can stir it again after an hour.  Can add more nutmeg each time you stir if you want to!

    Nice butternut squash @bubbs.  If there are any around when I get back from holiday I'll get one as I use it when I make my butter chicken, otherwise I'll need to get some frozen chunks.  Much prefer to use the fresh as I like to grate it so it doesn't take as long to cook before whizzing it up in the sauce!

    Today's plan:

    B - mushroom omelette - P; S
    L - toasted cheese sandwich, pickles - HEA2; HEB; S
    D - shepherds pie (using up the last of the roast lamb); green veg - P; S; F

    HEA1 - milk
    HEA2 - cheese
    HEB - bread
    Syns - none planned

    Let's try that again!

    Very cold here and glad to have taken the bus to work today - no scraping of cars for me yay!

    That IS huge BNS @bubbs - soup or will it be stuffed?! Could do both it's so large lol!

    I have bought puffed wheat, yog, blueberries, lo veg chilli and cous cous (just one further portion left now), apple, satsuma, cherry toms and a cheese portion today. Dinner is a new SW recipe of speedy chicken pilaf.

    Not sure if DH will go out tonight but if not we will continue to watch Fool Me Once on Netf!ix. Very twisty turny and a bit far fetched in places but a good watch.

    Hope those with poorly tums are feeling better today xx

    Afternoon all,

    I think I must be the only person in the world who doesn't like rice pudding! Or custard 🤣

    Think you've sent your expensive week my way @bubbs!  In two days I've spent almost £500 - and that's only passport renewal and car insurance!  Nearly fainted when I saw the insurance renewal price and comparing costs didn't throw up a huge difference. I've grumbled a lot this morning.

    No ice-scraping for us today but it's really grey with a dampness that chills you to the bone.  

    Today's food:
    B - missed due to a work meeting lasting too long!
    L - tomato and red pepper soup, toasted sandwich (HEB), smoked ham, cheese (1/2 HEA), red onion
    D - meatballs, tomato sauce, spaghetti, Parmesan (15g the other half of HEA).

    Thanks for the rice pudding recipes @joedenise and @bubbs. It must be the weather making me fancy a hot pudding. DH loves it so I'll perhaps put one in the oven on Sunday. 

    It's amazing how we can spend without even leaving the house @Jellybaby. My car insurance increased astronomically this year too. ☹️

    I think you successfully downloaded your Word document @Coxy11 but onto the wrong thread! 🤣 Keep away from those biscuits and mince pies!!

    It's strange but I've been 100 % on plan for a week but feel fatter than I did at Christmas. 🤔 Still got 2 weeks to WI so hopefully it will settle down. I've got more than 20 spare syns for the rest of the day. Corned beef tonight is about 4 so all OK.

    Today's EE plan - 
    B- HEB muffin, eggs (P), tomatoes (S), HEA milk 
    L JP (F), cottage cheese (P), spring onions, tomatoes, pickles (S) 
    D- corned beef hash (P, F, S), green stuff (S)
    Syns - 4?🤔

    Potentially a lot of soup etc there @.bubbs. We here get hefty bills Nov/Dec - house insurance, car insurance, recovery, caravan insurance, car tax. Not very well planned, but just the way things worked out!

    Lost 1.5 pounds at WI last night, just scraped into the very top of range, I really would like to get right back to goal/target or whatever it is called, but with all this cold weather and being  stuck indoors more, it may well take a while.

    Not looking forward to forecast snow for next week, must do an in person shop at the weekend to make sure there is plenty of fruit, protein, veg and soup making ingredients at hand.

    Keep plodding as the lovely @beanielou would say.
