Well done @beanielou , bet you were well chuffed xxx

@bubbs , can you adopt me please? Get me a GP appointment? Our doctors here are still not seeing patients and the last telephone consolation I had took place whilst I was in home bargains doing a shop !!

The care home story is just all to familiar. I was a crochet group last month, one the the lasses has a daughter with severe behaviour problems ( shes in the 30s) and there is only one residential unit in the whole of the Provence who could take her which is 2 hrs drive away, and they keep ringing the woman saying they are calling the police  as the daughter has lashed out. They are supposed to be able to deal with patients like her and then on top of it all the woman was slapped with a bill of thousands for care!!! Was supposed to be fully funded. The NHS is truly on its knees

My curry last night was a huge success even though I cooked it so completely different. I used just 1tsp of oil and 1 tbl spoon of tomato paste - the usual recipe is 4 tbl spoons of ghee, 4 of tomato paste - plus double cream which was omitted completely. We all cleared out plates and I found a naan in the freezer for Mr L so happy him :)

Stayed on plan and aim too today. Im at the coffee shop today and have some of Saturdays left over pasta to take. Not sure about tea though, its not very nice weather wise, quite cold and very wet. Hopefully I shall find a bag of stew or cooked mince in the freezer

Quietly confident for tomorrows weigh in.

@Longwalker most tomato pastes are syn free so you could still use your normal 4 Tbs of it if you wanted.  If you want to make a creamy curry have you tried coconut milk?  I only use 100ml at a time and freeze the rest in 100ml lots in a silicon muffin pan to use for the next few curries.  I buy the full fat one and then dilute it with a full can of water which is all that the light coconut milk cans are.  Works well and fairly low syn.

Well done on getting the Drs appointment for yourself and your DH @bubbs.  Even going to the surgery we can't get an appointment - they're all gone before the surgery even opens.  Phone lines open at 8.45am and the surgery doesn't open until 8.55am - and that's if they open the doors on time!

@joedenise thanks for the tip on the coconut milk, I do have some here, I make Thai curries occasionally - mums not keen. It was fine my only complaint myself - no complaints from the others - was I didnt get the depth of flavour as I couldn't get the onions to caramelise , they really need to go soft and dark but with barely any oil and using water to stop them sticking, caramelisation wasnt happening :)  But hey ho, I can live with that as long as well all got fed and clean plates :)

Found a bag of cooked mince, Ive cabbage peas and potatoes here so dinner is sorted. Not my type of dinner but they love it

@Longwalker - it's possible to caramelise onions without oil!  Takes a long time but sometimes it's worth it particularly if you cook a lot of them and freeze some for another time.  Try this link:

    Hope that helps!

You can also do it by softening the onions and then sprinkling some salt over them and continue cooking adding a little more water as necessary.  This seems to work quicker than the above method but don't generally get the really deep brown colour.
