The fact that the second landscaper wants £500 for colour-matched slabs, proves that the only way it was ever possible to have them the same colour as your old slabs, was simply to replace all of your old slabs with new ones.
Honestly, to me, it sounds like you're throwing another £2500 down the drain. I'm sure the second landscaper will tell you whatever you want to hear, to get the work.0 -

I’m going to get few more quotes, hopefully I will get ….some people told me to search for paving contractor instead of landscaper that might help
Reality is many people contact us initially and fix a date and time to see the area but never turn up. So only this first and second ever responded ..May be they get less work. We know the second will also fool us to get work but our current requirement is to fix the puddling before the slabs starts coming out as the alignment is also wrong and once the soil starts sinking in due to the water, the slabs may come out.
The puddling is near our compound wall and if it’s getting damaged we are answerable to the builders and the neighbours plus we will need to fix that.
So that’s a serious point to tell the court.

This time of year is the peak time for people wanting work done. Winter is passing, the weather improving and people want things spruced up now.
Many landscapers/ paving contractors etc will have a full order book already. Others will choose jobs that are worth their time.
Big firms don't want small jobs and one tactic is to overprice it so the customer doesn't go ahead.
You don't seem to know exactly what this new guy is intending doing.
is he 'matching the old slabs 9unlikely) or matching the new ones ( more likely)
What exactly will he do re drainage/ levelling ground/ laying the slabs?
How much will the slabs cost?
What other material will he need?
How many hours are involved and what is the labour charge?
Don't assume that what you have in ind is the same as what he has in mind. You need to know exactly what is involved.

There is no way that the new landscaper is charging you £500 to replace just 7 slabs (the ones in the L shape). That must be the cost to replace all of your older slabs at the very least.0 -
