    Thanks Suze. I had tandoori chicken and salad in the end. I had goose mince & onion gravy the night before with broccoli and cauli. 😆

    Went to aldee this morning total spend £41.37 which included 2 bags nuts, 70% choc, milled flax seeds, large eggs, butter, blueberries (super 6) and Greek yoghurt for baking. 

    This afternoon I made 2 ingredient chocolate mousse (no cooking) with tin of coconut milk & 70% choc. 1.5g carb per portion & lasts a week in the fridge if I don’t scoff it all in one go 😆 I also made yoghurt & blueberry breakfast cake 2.5g carb per slice & lasts up to 5 days in the fridge but 12 slices so I may freeze some for next week. I am also going to try blueberry and vanilla mug cakes 4g carb per cake. 

    Tomorrow I have aquafit in the morning. I am going to put butternut squash soup in the slow cooker in the morning. 

    Dinner tonight is chicken, green peppers and broccoli with black bean sauce 

    Meals will be Somerset pork casserole, Cajun chicken & butternut squash chips with salad, goose & courgette lasagne & chicken fajitas. I still have one portion of gammon, one fish stew & one pulled pork left in the freezer. 

    Just waiting for my credit card bill to appear in my online banking so I can sort pots and pay off my house insurance and breakdown cover.

    Feeling dreadful this morning. Too much chocolate mousse yesterday I think 🤔 Don’t fancy the blueberry yoghurt cake for breakfast. I am having scrambled egg. 😆 

    Butternut squash soup in the slow cooker, should be ready for lunch when I get back from aquafit. 

    My credit card bill has finally appeared on my bank app so I have done the money shuffle and paid it off in full. I would happily pay the bills in full straight from the pots but I want to keep the credit card active. I would be unlikely to get another with no income.

    Pool was freezing 🥶 not impressed! At least the changing rooms were warm. Butternut squash soup for lunch. Then popped to DF’s for a cuppa. 

    My 2 year bond matures at the weekend £54080, so I am going into the city with DF next week to sort out the funds. There will be £39900 into my new 2 yr bond opened with £100, £10000 to live off April 25 - March 26 and the rest into my instant access account ready for fencing the garden this year along with decorating the spare room and new carpets for stairs & bedrooms.

    I have baked some cottage cheese, flax seed, egg, almond flour, blueberry muffins. They look ok. 3g carb each, no sugar. Will see what they taste like when they have cooled down after dinner. They are supposed to be for breakfast 😆

    Hey Suze I had one of the high protein/ high fibre / low carb blueberry & vanilla muffins warmed for breakfast with some Greek yogurt. They are brown because I could only get brown milled flaxseed (linseed) & not milled golden in aldee. The white bits are cottage cheese not chocolate 😆 

    They were ok. Nicer than the blueberry and yoghurt cake & easier to make but will not have them again for breakfast. 

    So the low carb baking has not been a total success. I have never been very good at baking. I can’t even make a banana loaf 🙄 I will stick to the carrot & apple muffins I have made before which I do like with a cup of tea as a dessert / treat made with almond flour so low carb. 

    Next week I will buy extra eggs & bacon and make a crustless quiche with bacon, peppers & onion & broccoli and a little grated cheese. I would have courgette & cheese fritters again. I will also have tinned mackerel on 9g carb toast. Need to look out for something else for breakfasts. No more Greek yogurt. 😝

    DF called round for a cuppa. Not a lot else done today. Turned very cold. Aquafit in the morning. Hope the pool is warm. 

    Interest rates came down today so I am glad I opened my bond fixed rate in case they come down quickly
