Would love the vegan banana loaf receipt - got loads in my freezer ( where I forget to eat them and then they start to turn black and I hate to eat them fresh when they’re on the turn I like them when they’ve just turned from green to yellow so I freeze them and stick them in a cake! )As a dear MSE friend says “keep plodding” or

That's the worst part of the working week almost done. Worked in the office until just after lunchtime and need to do another hour to make up my day.
Stopped off a Lid! on the way home and I have now hit the £50 spend mark so have got a free vegetable item - I notice this has changed from the free fruit item. In even better news I won £10 off a £10 shop on the super spin 😁
In money news 0ct0pus are lowering my monthly direct debit as they think I have more credit on my account than I realistically need which is £580. I'm happy with that as it will still leave me with a decent buffer.
Today's exercise has been walking to/from work and I have a live Zumba session at 6pm so will be on well over 20,00 steps by the time I collapse on the sofa tonight.
Tonight's dinner is salmon, coriander and lime rice and stir fried veg.
DD had her consultant's appointment yesterday and unfortunately she still needs to have her gall bladder removed. She's not very happy about it as she's been feeling so much better since her health scare last year and thought she'd got away with it.I get knocked down but I get up again (Chumbawamba, Tubthumping)8 -
My recipe for banana loaf isn't vegan but as far as I can tell the only difference is sunflower oil not butter & like SA I have halved the sugar. One thing I always do with recipes is convert the self raising flour to plain flour & add extra baking powder as per Nigella, it cuts down on space needed to store the flour. Pecan nuts seem to be interchangeable with walnuts too. I must try it with sunflower oil, which I haven't done before as the recipe I found had almost 3 times the amount (400ml) & it just seemed so much that I knew it could never work.

Sorry about the banana hijack.Sorry to hear about DD's gall bladder. I can see why she would be disappointed. A friend of mine had hers removed over 20 years ago and although she is not well now it is not related to her lack of gall bladder. Mostly those cigarettes that she still won't stop smoking.3

Keep forgetting to mention a lovely podcast I’ve discovered recently called Strangers on a Bench where the journalist sits next to a random stranger on a bench and interviews them. It’s really interesting. I’ve been listening to it on my walks to work.I get knocked down but I get up again (Chumbawamba, Tubthumping)2

Morning all, happy Friday eve.
WFH today so a nice leisurely start to the morning reading with a coffee and doing a few Spanish lessons.
After the weather being so mild and sunny yesterday it's back to being cold, frosty and foggy this morning.
Today's exercise plans are dog walking later this morning, a live weight training session at lunchtime and Zumba tonight. I try to aim for 15,000 steps when I'm WFH as I don't have the long walk to/from the office.
I've taken a pack of roast Mediterranean veg out of the freezer to defrost. I'll have that with some pasta for tonight's dinner. Another thing gone from the freezer and will use up some of the lentil pasta I've had for ages.
Grocery budget wise I've now got £10 in Mr M vouchers and have decided instead of using them randomly on the weekly shop, and not really seeing the benefit, I'm going to keep them until I do a stock up shop when there are some good offers on. I'm doing quite well with the grocery budget at the moment as I stocked up so much during November/December.
Money wise it should be a NSD.I get knocked down but I get up again (Chumbawamba, Tubthumping)5
