    Soup of the week will be sweet potato leek and lentil.

    pork chop, buttered leeks, mange tout, pineapple and kefir
    mackerel, salsa verde, tomato salad, pineapple and kefir
    salmon, roast Mediterranean veg, pineapple clafoutis x 2
    pesto pasta
    halibut, peas and sweetcorn

    and I intend to have an indulgent Valentine’s Day meal and pretend someone loves me - steak, mushrooms, egg, potato wedges and some nice wine.  Can’t make up my mind whether to buy a tiramisu or make one.  Priced per portion it’s cheaper to make, but I’d be eating it for many days and that’s maybe just too indulgent.

    Still plenty of soup in the freezer and a few bits needing using up so a smallish shopping list again today. This week looks like this:

    Sat - out for afternoon tea so maybe a small snack later
    Sun - sausage, leek and mushroom pasta, broccoli 
    Mon - beetroot burger, sweet potato fries, salad 
    Tues - beans on toast 
    Wed - prawn and broccoli egg fried rice 
    Thurs - harissa lamb steak, feta and pomegranate couscous, griddled courgette 
    Fri - smoked salmon and broccoli gnocchi

    This week's meal plan:

    Sat (today) - Hm tomato & red pepper soup and ham sandwich, vanilla cheesecake topped with grapes for afters
    Sun - Cooked chicken slices (from freezer), sprouts, mash, mini Yorkies
    Mon - Salad, probably tinned pilchards
    Tue - Hm cottage pie, diced swede & carrots, pickled red cabbage
    Wed - Hm fish pie, peas & sweetcorn
    Thu - Egg, beans & chips
    Fri - Battered cod

    Gaps are appearing in the freezer and pantry, thanks to using up stocks, and there are still things to be had.  I'll be doing a grocery order for delivery on Tuesday but will be keeping it as small as I can - not hard when you look at the price increases whilst trying to stay in budget.   :)  Soup of the week will be leek & potato.
    Be kind to others and to yourself too.
  • My meal plan is using everything we already have and hopefully avoiding shopping until Sunday, but may need fresh fruit and veg in a few days if there isn’t any on olio again this week.

    Today- made a SPaG Bol but using vegan steak strips
    Monday- sweet and sour with noodles and veg
    Tuesday- pizza, garlic bread and cucumber 
    Wednesday- sausage, duck eggs, beans and hash browns
    Thursday- fish fingers, noodles and veg
    Friday- pesto pasta
    Saturday- something with remaining chicken pieces, maybe spicy Cous Cous.
    sunday- shopping day, plan to do roast chicken.

    Done really well this week and stuck to six out of seven meals. So, one has rolled forward.

    Working through leftovers and stray freezer bits still. Subject to change if I realise something needs using up or I have more leftovers.  

    Tonight I used up homemade coleslaw with potato, a scrappy bit of vegan cheese, topped with salad.

    23rd onwards:
    'Scrambled oggs' fried rice 
    Dahl
    Tofu meal
    Savoury lentils with carrot and swede
    Pitta meal or pizza
    Something with courgette
    Something with butterbeans

    Loose plan for this week:

    1) + 2) Still need to do the last two meals above, as ate leftovers of other bits. 
    3):Last night I had pasta, pesto and spinach. 
    4)I am going to have some sort of "pulled pork/bbq" jackfruit one night probably with rice or corn and chips.
    5)Another tofu meal 
    6) Coronation jackfruit with jacket potato and salad bits
    7) meatballs with mash and green beans or pasta again. 
    Sorry for the stereo silence. I've been a bit uninspired this week and distracted.
     
    I made an Egyptian stew using the courgette and butter beans. It was very nice
    I didn't have the pulled pork style jackfruit, not sure what I had instead. Did have Coronation Jackfruit though. 
    I had Pineapple tofu which I have leftovers of, and changed one of the meals to Cauliflower Jalfrezi; which  made two meals and i also have a portion of it left over.
    Meatballs and mash didn't happen, but I've had a stir fry rice type meal somewhere this week too, and Nacho potatoes. 
    Last night I had breakfast wraps for tea - mung bean egg, burger instead of sausage, spinach and tomatoes. Sometimes I'll do a variation and add hash brown style potato, beans and mushrooms. Wasn't going out to buy the ingredients specially though.

    The week went more or less to plan except that I was out more than I expected so still have salmon fillets in the freezer.    This week’s soup will be cauliflower and coconut.

    Salmon, roast mediterranean veg, clafoutis x2, 
    cauliflower  cheese, raspberries and raspberry milk jelly x2
    sardines, salsa verde, spinach, green beans, fruit salad x 2
    odds and ends risotto and whatever is left of the clafoutis

    The weeks are disappearing fast - over half way through February already!  This week's plan:

    F - Fakeaway KFC, chips, corn & beans
    S - jacket potato, tuna mayo & salad
    S - roast beef dinner
    M - beef curry using the LO roast beef with rice
    T - squash, sweet potato & chicken tagine, couscous (from freezer)
    W - pork steaks; mash; veg
    T - beef stew, mash
    F - cottage pie, veg

  • Another week rolls by! Only change this week was the prawns and broccoli were in sweet chilli sauce with noodles instead of in egg fried rice.

    Seems to have been an expensive month so still using up as much as possible to keep the grocery shopping to a minimum. Plan from today:

    Sat - tapas/snack plate with fresh baguette 
    Sun - roast chicken, potatoes and carrots with green veg
    Mon - chicken and mushroom pasta, green beans 
    Tues - beans on toast 
    Wed - Thai red chicken curry, noodles, mange tout/baby corn 
    Thurs - salmon, creamy beans and leeks (from freezer)
    Fri - chickpea and halloumi stew, pitta bread 

    Will also make Thai butternut soup 😋
