K9sandFelines said:Done really well this week and stuck to six out of seven meals. So, one has rolled forward.
Working through leftovers and stray freezer bits still. Subject to change if I realise something needs using up or I have more leftovers.
Tonight I used up homemade coleslaw with potato, a scrappy bit of vegan cheese, topped with salad.
23rd onwards:
'Scrambled oggs' fried rice
DahlTofu meal
Savoury lentils with carrot and swedePitta meal or pizzaSomething with courgetteSomething with butterbeans
1) + 2) Still need to do the last two meals above, as ate leftovers of other bits.
3):Last night I had pasta, pesto and spinach.
4)I am going to have some sort of "pulled pork/bbq" jackfruit one night probably with rice or corn and chips.
5)Another tofu meal
6) Coronation jackfruit with jacket potato and salad bits
7) meatballs with mash and green beans or pasta again.

I haven’t been too well and the brain was fluffy so had to stick to meals that I could cook on auto pilot without thinking too much. Still managed a low spend though and aiming for the coming week to be another low spend. I’d prefer it to be a no spend but I need a lime for the salsa and I’ll probably run out of kefir.Spicy lentil stew and rice x2
tuna anchovy olive pasta
mackerel and tomato salsa x2
pesto pasta x2
desserts will be variations on fresh and canned fruit with kefir.2 -
Hope you’re feeling better, bouicca21, take it easy.
Another week rolls by…been a long one so currently on the sofa with tea, a hwb and James Martin (on the telly), doing a bit of gentle recipe browsing and menu planning.Going to make nana’s magic soup this week. Dinners as follows:

Sun - pork in cider (from freezer), swede/carrot mash, green veg
Mon - chorizo and broccoli pasta
Tues - beans on toast
Wed - gnocchi with mushrooms, Stilton, spinach and walnuts
Thurs - tuna steak, Mediterranean lentils, spinach
Fri - salmon with creamy leeks and cannellini beans
Fairly small shopping list as quite a lot of using up going on 🙃3 -
Sat - beef stew - pressure cooked last night and defatted this morning - hopefully a few portions into freezer for another day
Sun - roast beef dinner (beef from freezer)
Mon - cold beef, chips, beans, pickles
Tues - chickpea and veg curry/rice - from freezer
Wed - takeaway KFC, chips, beans, corn on the cob (chicken and corn on the cob from freezer)
Thurs - pork steaks, mash, veg (pork steaks from freezer)
Fri - jerk chicken, rice 'n' peas (chicken from freezer)
Quite a bit of freezer stuff being used up plus beef stew going in. Think more is coming out than going in - I'll get that freezer emptied enough to defrost soon!

I didn't make the bolognaise sauce last week (not needed yet) but I did cook a rice pudding. I have half a pack of frozen puff pastry and some crumble mix to use up so will use one of those tomorrow for fruit pie or crumble since I'll have the oven on for a tray of mini Yorkshire puddings, so may as well fill up the space.Be kind to others and to yourself too.3 -
