Organised nice and early this week, and using quite a lot of what I’ve already got so a small shopping list today 😀
Sat - pork in cider and mash from the freezer, broccoli
Sun - chicken thigh and parsnip traybake, green veg
Mon - chicken, chorizo and sweetcorn pasta, green veg
Tues - beans on toast
Wed - prawn egg fried rice
Thurs - harissa butter bean stew
Fri - smoked mackerel and leek risotto, green veg5 -
Trying to use up stuff this week from fridge and freezer:
S - beef and bean stew (from freezer), mash
S - lamb shanks (from freezer), potatoes, veg
M - Vegetable biryani (vegetables from freezer)
T - Hunters chicken (chicken, bacon from freezer), potatoes, veg
W - sausages, chips (both from freezer), beans, mushrooms
T - lamb chops (from freezer), mash, veg

This week's meal plan, from existing stocks:
Sat (today) - Seafood platter (prawns, fish sticks, cockles) with side salad
Sun - Roast beef in gravy (from freezer), mash and a mixture of LO veg
Mon - Salmon salad (tin of salmon)
Tue - Chicken stir fry & noodles (cooked chicken pieces from freezer)
Wed - Fishcakes (from freezer), chips & peas
Thu - Sausage (from freezer), mash & greens
Fri - TBC but probably something fishy
Soup of the week - tomato & red pepper.
No baking needed as there's plenty of sweet goodies in the freezer and I've already made bread, both white and wholemeal. There's also a variety of other bread-y options in the freezer - baps, wraps, part baked mini baguettes and breakfast muffins.Be kind to others and to yourself too.4 -
Just quickly adding my meal plan for the week ahead as I almost forgot again.Monday- fish wrapped in pancetta (got for Xmas and forgot about it in freezer) with Cous Cous and veg.
Tuesday- assorted pastry tarts (also bought for December and then forgotten) with veg
Wednesday- Hm chicken burgers, spicy wings and noodles
Thursday- all day breakfast
friday- bacon hash
Saturday - pizza, garlic bread and wedges.
Sunday- chicken pie and roasted veg.4 -
we are having an early Lunar New Year feast. We have a huge liking for Korean food so we're doing a Korean short rib soup (not highly flavored...more of a comforting earthy but simple flavor), several small plates of appetizer type things (kind of like tapas)--spinach, zucchini, cucumber salad, lotus root, miso-glazed aubergine (which is sooo good that I find myself standing in the fridge light taking just a pinch with my fingers in the middle of the night--it is SOOO good). I am braising some beautiful oxtails that I got this week, and some Korean grilled spicy chicken. We have a carambola salad for a sweet, citrusy sort of salad. Lots of food but I wont have to cook for 2-3 days after this with the leftovers. I am lucky that my husband loves leftovers AND korean food.5

This week's meal plan. Anything not eaten will roll over or I will just eat components of leftovers put together, if I don't fancy cooking what's planned. I've got one freezer currently defrosting, but still need to whittle stuff down in the other or before putting back. My fridge freezer is on its last legs So need to try and get rid.
Fri will be one of the three, not all three! Right I will stick to a meal plan this week - I've been having a few days where I just don't fancy dinner so it's a jacket potato in the air fryer for me and DH has been cooking his own stuff. But this week I'm determined to actually eat:
